About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZfaq.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

I make these for breakfast with egg in between the spam and rice. If you can find the half-height spam cans they make perfect single serve molds and are easy to press. Turn a ketchup bottle with a twist lid upside down and it's even better for pressing. I just use pre-made teriyaki sauce, what's nice is all the ingredients can be found in most any supermarket with any semblance of an Asian food aisle.

I was in Oahu for just short of three weeks from late December until first week of January, and didn’t realise how good spam could taste until I had musubi. I was eating them regularly since you can find them in any store. Regarding your kanji subtitled new channel, congratulations! However, analytics-wise if you’re interested in keeping views on the English channel, the Japanese-subtitled channel could theoretically be cannibalizing views from the English one, which will obviously throw off anything related to analytics. I will subscribe to it anyway, as I have been watching Best Motoring’s KZfaq channel and only understand a fraction of what they are talking about since there is almost zero English- may as well immerse myself in as much Japanese as possible.

I tried the one with sauce I added on my plate pickled ginger and wasabi(well what passes for wasabi here in the states. I found out I can use my steamer pan to steam rice in a heat proof bowl. I love it I don't have to buy a rice cooker now.

Great variants of spam musubi! I’m going for it later. Btw, a suggestion. If you use the lid from the Spam can, it’s easier to push down on the rice and get an even layer.

@Craig N Another tip is to remove the bottom of the SPAM can, and that way you just set the whole thing over the seaweed and you don't have to get it out of the mold - so no plastic wrap waste! Just use the can just like he used the mold - so easy. (I love your tip to use the lid, by the way.)

I have started making my own teriyaki sauce with equal quantity of soy sauce, mirin, sake, orange marmalade and some ginger grated in, cook it down a bit and add some corn starch to thicken it. I love spam musubi this way. I'm going to try the katsu and tempura, that looks delicious.

YES, & their Teriyaki Chicken Musabi! & if you get that at the local Hawaiian 7-11 Stores (only place to get them there), get the steamed Maunapua as well (aka sweat steamed super soft bread stuffed Pork Buns in red coloring!). Wish they sold both of them inside the U.S.!

So I'm hoping there will be a Korean market or enough Korean type groceries for me to buy that won't kill my bank account.

As a Hong Konger, we are not stranger with luncheon meat or SPAM as in US. We love have them on daily basis, not only it is cheap but so tasty that can't simply ignore. That being said, I have yet tried a Katsu SPAM, will give it a try whenever I have a chance. :D

*Love* how much Sushi Chef extraordinaire Hiro enjoys eating the foodstuff He prepares. As well He should! I would very enjoy eating the Hiro made-meals too! Also, get a smile/kick from how much Hiro & ‘bestie’ Cameraman, who shall remain nameless, enjoy their avocados. I enjoy eating avocado very much also ie grew up in SW Texas (btw, have *never* voted Republican/GQP :-) Ha! Looking fwd to when Hiro perhaps combines avocado, fresh-fried bacon, choice of fish, whether sliced raw or cooked, plus rice & makes either a sushi ‘roll’ or an ‘Onigiri’ or maybe both in upcoming single episode. The musubi I had in Oahu had a beaten egg. I cooked my spam with the soy sauce, hoisin sauce, honey and sesame oil. I cooked in low heat so it would have that crispy. I use the 2nd method with can.

You don't need the film, just take a can opener to the other side, and you have a perfect SPAM shaped oshizushi mold - pack it in and lift up.

If u are from NY NJ or PA they have a product called pork roll. It is similar to spam but a lot LESS salty and more Smokey and expensive I love it but it seems to be an east cost thing. I think the older snowbirds that went to Fl had their cosco and BJs start ordering it

I call my fingers Southern Illinois Chopsticks. Trued to convince my husband that he is not eating Maki Sushi correctly and he is offending the Sushi Chef.

I'm from Hawaii and I'm watching this. I prefer the plain way SPAM (no need teriyaki, tempura, and so on) extra crispy musubi. Add egg to it too. Than wrap it with nori. Learned something new; use the can as a mold. Avocado in SPAM musubi; I'll try it but that just makes me want to eat California roll instead. By the way, we need a Family Mart like the one they went to. If you're on Oahu; go to Leeward Drive Inn and try their Spam Musubi with egg. 7-11 is good too.

I recommend people try adding kimchee, tsukemono, or a scrambled egg to the OG spam musubi...its so versatile. Try different flavor combos...you'll love it.

I would recommend Danish ham over spam for some things similar to this. It's got a really really similar flavour but a bit more meaty texture and bite. It's texture is kinda like chicken

I’d like to try the katsu one, I wonder if pan frying the spam before hand (letting it cool before coating it of course) would increase the flavour more.

the trick for regular spam musubi at least to me is to slice it thin and pan fry til crispy, and mix some furikake seasoning into the rice. Also, you can try to marinade the spam in a bit of teriyaki sauce. Gives it the sweet/salty hawaiian bbq flavor and the rice soaks the teri sauce nicely. I am born and raised in hawaii, and thats how i prefer it anyhow.

I like to add a little bit of shredded cabbage between the spam and rice in the masubi, that has had a bit of vinegar added to it.

Master Chef Hiroyuki, where can we buy the Spam cutter & plastic mold for the masubi ? Thank you so much! My Mom was from Nagasaki. I was born here. Thank you for the recipe! I learned about Spam when my mom & I moved back to Hawaii after highschool graduation in 1979. We were stationed there in 1967-1969 when my American Father was Viet Nam War. Is that standard mayo and Ichimi they're dipping the musubi in or is it some sort of wasabi aioli? I also love the technique for using the actual can to form the musubi :) I never grew up with Spam, but after living a year on Maui got a hankering for it, so have to pick it up when I see it in the store!
