Sorry this is a chatty video but lots to share :). Since we're hoarding them, we may as well make them yummy! A delicious prep for Red Beans and Rice. Grab a jar, add sauteed andouille sausage and serve over rice. Emeril would be proud :).
Makes 7 quarts
7 c. small red beans or kidney beans
2 large or 1 extra large onion, chopped
2 large green bell peppers, chopped
4 stalks of celery, chopped
2 T. garlic powder
2 Bay leaves
2 T. Cajun Seasoning
1 T. Better Than Bouillion Chicken Base
Water or stock to cover beans by 2"
Soak beans to rehydrate, I used the quick soak method. Add all ingredients to a stockpot. Bring to a simmer and simmer gently for ~30 minutes.
Fill hot jars 2/3- 3/4 full with beans then add cooking liquid leaving 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can quarts for 90 minutes, pints for 75 adjusting for altitude as follows:
Weighted gauge Dial gauge
0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

My wife and I are from South East Louisiana and love our beans and rice. I wanted to add a suggestion for folks who are trying to be salt conscience, the cajun spice mix we use is Tony Chachere's more spice(wich simply means they are using less salt in the mix) and it allows us to add salt separately to taist while letting us enjoy our wonderful cajun seasonings.

I love cooking beans for canning the way you taught. I always soak. You are so awesome. I'm canning these beans right now. I got 9 pints. With some left over for tonight's dinner. I did use a two , one pound bags. I can't thank you enough for the different beans ideas to can. I can't wait to eat these beans tonight. (We do eat a lot of different types of beans)

You are my go too for canning beans, love your videos. I especially like this recipe used with my vegetarian 'vegetable bouillon' black eyed peas and always a buttermilk cornbread to serve with it.

I have done this one. Loved it! Thank you! I have no issue with soaking over night. It also takes the guess work out of how much the bean expands and they don't suck all the fluid up. Makes for a much prettier jar of canned food.

love the tiger, lol, im a 67 yr old retired construction contractor that loves to can and garden. My grandmother raised 6 kids during the depression era by canning over 600 quarts a year. A sharecroppers wife, she canned everything, just wished i would have learned more from her, but men didnt do canning back then. You do a great job, i've used your recipes and love the chili no soak beans. keep on keeping on. lol Ron ps, this was done on a wood stove!

Canning my first batch ever tonight! I’ve been watching a lot of different canning/preppers KZfaqrs but going to follow your process. I don’t think there’s another canner that LOVES beans 😁 like you’ve said you do so the best recipes have to be yours. I appreciate all the canning 101 and safety information you provide!

Red kidney beans contain relatively high amounts of phytohemagglutinin, and thus are more toxic than most other bean varieties if not pre-soaked and subsequently heated to the boiling point for at least 10 minutes. The US Food and Drug Administration recommends boiling for 30 minutes to ensure they reach a sufficient temperature long enough to completely destroy the toxin.[2] Cooking at the lower temperature of 80 °C (176 °F), such as in a slow cooker, can increase this danger and raise the toxin concentration up to fivefold.[3] Canned red kidney beans, though, are safe to eat straight from the can, as they are cooked prior to being shipped. As few as five raw beans or a single undercooked kidney bean can cause severe nausea, diarrhea, vomiting, and abdominal pains.[4][5][6] from wikipedia

The other precaution to take if canning beans with cooked minced meat, s it can only be canned in pints or smaller. Great video as always.

So sweet of you to explain why you missed comments. You are one of the few that responds to viewers. I had a jar explode yesterday doing the enchilada sauce and 3 jars next to that jar that needed to be reprocessed. Kind of frustrating for all the work

I have been canning for 30 years. I have a degree in Biochemistry as well as Chemical engineering. What the USDA approves and what is considered acceptable is usually a matter of opinion, Not truly scientific fact. For example, concerns about heating the sausage is poorly sound. This is a matter of heat transfer. There is very little difference in conduction of heat with any of the food products being canned. I have canned and keep experiments for as long as 7 to 10 years. ( I usually consume it prior to 7 years). I do make all my own sausage, but with minimal chemicals, just proper safety procedures. People want to just voice opinions, but have no basis in fact. I'll stand by success. I also like the tried and true lids popping up. Likely if it is still indented it okay.

I’m brand new to canning and I really appreciate you making this video and covering the guidelines. There is actually a recipe on the official ball mason jar website that is “Louisana red beans and rice” it does in fact contain andouille sausage, bacon, and ham hock. I believe ball mason jar recipes are lab tested so the meat should be safe to add if you want!

physics is what makes canning safe-to-eat... 10 lbs pressure at sea level for 90 minutes ensures that everything inside the jar is good to go and that no botulism spores survive.. somethings can change that like thickening agents.. no way nitrates are one of those though.. they just have not "proved" it yet.... I'll take the chance... they also say you can't use an electric pressure canner either.. lol.

I always buy the boxes of Zatarains Red Beans and Rice, but I saw your recipe and I just finished canning up three quarts and four pints. I'm going to give it about a month for the flavors to develop before I open a jar. Now, if I can just wait for a month

Hello again, I am so excited, I received my All American pressure canner today and making these beans will be the first thing I make. My question is I want to do pints so what should I do with the excess product till I can can them? Should I refrigerate them and then reheat when ready to process? Also, does the canner need to be filled with jars to use? Thank you for your time and knowledge.

Yes refrigerate then reheat. For pressure canning you need to have a minimum of 2 quarts or 4 pints for proper processing. Your canner does not need to be full

TheMsLady4Real hi! I always keep my jars hot in my sink filled with very hot water. It works well for me bc of how my kitchen is set up. Some people use their dishwasher. You can also keep them in a pot on the stove but don’t boil them. Hope that helps 😊

I know this video came out a while ago, but I finally made it last night and it came out fabulous. My question is I only had enough room in my canner for seven jars, I had 12 to do. Now waiting for the next canning load should I leave the lids off or put them on to get ready?

Thank you sooo much for the very informative videos! I have one question on this one. After you soak your beans to re-hydrate using the quick-soak method, after the one-hour soaking period did you dump the soaking water and re-fill with new water after ingredients were added, or did you retain the soaking water and just added more to simmer?

I finally got around to making these. Got almost done simmering and realized I used red kidney beans instead of red beans. They soaked up too much of the broth so I had to top off with water to bring up to an inch. Of course right after I did that, I remembered In have chicken stock I could have used instead. Hopefully they still taste good

Hi! If it’s not a climate controlled location try to keep them out of direct sunlight. I wouldn’t keep them any longer than a year. And the process is the same but you will have to google your altitude and make necessary adjustments for altitude. Take a look at my video for new canners…

I contacted San extension service about cured or smoked meats. They suggested using a broth from the meat product to add flavor.

Hi Carol. Please help me with a question. I canned quarts of great northern beans by soaking overnight, then rinsed them and simmered them for about 20 minutes in fresh water with bouillon mix for flavor. I added hot bean to hot jars about 3/4 full and used cooking liquid to fill jars to 1 inch mark. Looked great out of canner, but the next day the liquid was almost all gone and what was left was really thick saucy liquid, almost like gravy. Where did I miss it??

WL Ware you didn’t do anything wrong. I have found some beans absorb more liquid than others. Two ways I’ve gotten around this... add fewer beans and more liquid, 2/3rds full of beans then add liquid to 1” headspace or par cook beans for a longer period of time. It’s the starch in the beans that is making the liquid more sauce like. It is frustrating for sure. Your beans are still safe as long as your seal is in tact. However, the top layer may discolor. Still safe but they will darken. I usually just discard the top layer of beans. Hope this helps 😊

Question about the AA canner. Mine will start sputtering steam and you can feel the air pushing out ,BUT you can’t always seem steam. So, do I start the ten minutes when the air is pushing out? I have waited trying to get a “steady” stream of heat,but then the pressure starts rising

It can be tough to tell sometimes but yes, when you start to feel air pushing out you can start your venting time 😊

Can you use ground beef instead of andouille sausage? I was wondering if I could cook/brown some ground beef and put it in while simmering for the 30 minutes?

Sherry Duck Hi! YES I love my All American Canner. Pricey but worth the investment. I have the 915, it holds 7 quarts or 8-9 pints. 😊

Hello Carol, I have a question. I just started getting into canning and I noticed a white chalk-like residue on the outside of my jars after canning some jam. I was wondering if this is normal?

I've never seen a video with so many ads, why are there so many? I really enjoyed this recipe and will make it this weekend. Can you saute the veggies first before adding to the beans? Also, I imagine it wouldn't be ok to smash a few of the beans to cream them before canning?

Oni KZfaq inserts the ads. I wouldn’t sauté them bc you’d have to add fat and no to smashing bc it can interfere with heat penetration. Smash them when you open a jar

I'm curious about the safety of rhe amount of onions used. This looks amazing and want to try it but read somewhere ( can't remember where) about large amounts of onions being unsafe?

Sharon S the ball recipe for Boston Baked Beans allows for 3 large onions. I used less here. If it concerns you, reduce the amount or leave them out. Also there are canning guidelines for pressure canning onions on their own www.clemson.edu/extension/food/canning/canning-tips/31preserving-onions-garlic.html

Processing times were established using hot beans, jars and canner. I cannot recommend canning cold

I made this recipe for my first time canning. I halved the recipe as I used pint jars, and made only 7 pints as I didn't want 14 pints of disaster in case I made any unrecoverable mistakes. They turned out wonderfully, and will make a full batch next. Can anyone tell me how long these should be good on the shelf? Thanks
