Greetings! The other night in the Homestead Honey Hour chat room, one of my regular subscribers as well as a regular chat room guest, shaunalovestocook, was chatting about how she wanted to start canning, but did not have a canning rack and unless there was some "redneck" way to solve that she didn't know what to do.
Well here is the answer to that question. I know that I have come across this dilemma every now and then and have been posed similar questions. The answer is as simple as using a plate that is a bit smaller than your pot or what I have done here.
Construct yourself a canner rack by using mason jar rings. If you have extras, put them to use. I would suggest only using the 'regular" sized jar rings as opposed to the "wide mouth" rings because I think you will have more success keeping your jars off the bottom of the pot.
You can also use this with a larger stock pot. You don't have to have a canner to start canning, you only need to have a pot large enough to accommodate the jars you are using. The pot I have used in this video is an 8 quart stock pot. I would only be able to use pints and jelly jars, but not quarts because I would not have the proper amount of space at the top to have 1 inch of water on top of the jars for the water bath processing.
I have lashed the rings together with some small zip ties or cable ties. You can find these at the hardware store or in the hardware section of any big box or even the dollar store.
This will give you a canner rack that you will be able to use for at least this season. The rings are not rust resistant so you may see rust forming. Make sure to dry the "rack" after each use to prolong it's life.
I hope that this information is helpful to shauna as well as others who may have been faced with the same problem.
Remember, there is always a way to make it work with what you have. The old adage holds true. "Use it up, wear it out, make it due or do without". We can do what we can do with what we have and we don't have to spend a lot of money to do those things.

If I close my eyes and listen to your videos I can get lost in the beautiful sound of your teachings and tips. I was taught cooking, canning, baking, crafting, & gardening at the age of 5 from my amazing Gram. She raised me from birth and your home & relationships with family and youtubers and even the family pets is like stepping back into 1975 again. When she passed away my desire to be creative passed too. I did the store bought unknown things until I found you and Ms. Volpe Half Acre Homestead. Well you brought me back Ms. Noreen and I can't thank you enough. I believe I wrote to you once before but I needed to thank you more sincerely. I hope this doesn't feel creepy to you because it's meant with the utmost gratitude. My boys now get to smell & taste the delicious food and see the beautiful crafts that go along with the heartwarming stories and memories of Grandma Di 💖 You're an incredible women Noreen, I hope there's a lot more of your videos to be seen.

I wanted to start canning. Growing as a kid I remember doing it with my grandmother during the summer. I bought everything I needed but found i had no rack. I couldn't run to the store but this has solved my problem. This is so ingenues! And I love your camera person lol

Glad to help! I suggest the Ball elite water bath canner, it comes with a stainless steel canning rack that is 100 percent better than the crappy aluminum one that you will see for $20 in the big box stores. This is a good alternative. I know people who just put a dish towel in the bottom of their pot as well, have been doing that for a number of years. Whatever works! Just keep on canning!

Noreen! This is brilliant! I am always using the rack that came in my pressure canner in my water bath canner because I hate those wire basket things. This will solve that sharing situation perfectly. And you always seem to have an abundance of rings, so great way to use them. I am just so tickled with this idea!!!

I have no rack, and I was racking my brain for an idea, and I thought of this and went on KZfaq to see if anybody else thought of it. I suppose if you had plenty of bands you could also stand them up between the jars to keep them from rattling.

Newbie canner here. Been trying to find a rack, for my little pot - just to try out canning --- but they are just so big... Dont want to invest in a regular canning pot now --- now cuz monies tight... This is great! Thanks for sharing❤

my canning rack died in my enamel pot, the pot is still good, I just put the one that came with my pressure canner in the bottom, until I could afford a couple of extras. That is still a great idea if caught in a pinch!!!

I am on it, doggone it! Did not want to spend $21 on Amazon for a doggone rack. I have extra lids for sure. I am going to make sugar free pickle relish which is expensive for a small jar of cucumbers. Thanks!

That's the method I used a few days ago when double-decking pint jars. I had a pressure canner that only had 1 rack but was tall enough for 2 layers of pints. I used canning rings in the bottom & the rack on top of the bottom layer. To get a better seat, I used wide mouth rings with regular mouth rings sitting inside them. Steel rings don't float.

Thanks Noreen's for your nice demonstration. I wasn't sure which way to turn the rack. Up high or down low. So keeping it low is good enough. I had trouble trying to find that information. And you explained it well. Thanks again. You did a nice job on your video. :-)

Nevermind doesnt work. The jars just easily tip over because the rings dont work for the jars to sit on top. Waste of time just buy the rack!!

I bought a round steamer rack for a wok for $.99 at good will and it fits perfectly in the bottom of my 16 qt stock pot. I also found a great 21 qt stainless steel stock pot at Target that fits my canning rack perfectly so I'm returning the enamel one I bought. I love you tips and listened to the Homestead Honey hour, it's great. I love this community of homesteaders.

So good ,,,, but he has moved to Tennessee , and I just bought a lot of peaches ,, putting up peaches with no pot ,!! Kinda hard , have a big spaghetti pot but nothing for the bottom , thank you for that idea...

thanks for sharing this tip! I inherited a waterbath canner from a friend, but the rack is all rusted and it is the type with the dividers for quart jars...I'm canning half pints. So onto my ring stash! thanks!

that went pretty well, except for the jars wanting to drop into the rings... so next time I'll use zip ties to go across the rings so the jars dont sink into them.

The rings do not float. I suggest you try first. The rings don't even float if you put them in the water by themselves to heat them up. I am simply giving options. In this economy, not everyone has the extra money to spend on things like this, but might like to can on a smaller scale. Additionally, some people may not have access to such equipment. Giving people ideas to think outside the box is never a bad thing. If you have a better way, make a video! It can be your first!

Hi Noreen. I also lost the rack to my canner. It's called grandchildren!..lol Anyway, what I did was pull out a trusty round cake cooling rack. It fits perfectly in the bottom of the pan and no tying lids together. Just pop it into the bottom and away we go. Just wanted to share, since most of us have a cake rack under the counter somewhere. Hope this helps someone.

Just found this video. Someone had some jalapenos and I wanted to make jelly but I don't have a canner. Whoo hooo! So cheap to do this. By the way...when I was young, everyone used wax to pour over the jelly. No canning...not sure how we survived it. LOLThanks for the video!!

This may not pertain to this video but I'm betting I'd trust your answer! What is the difference between table salt, kosher salt and canning salt for the canning process? I don't buy iodized salt but do have kosher and sea salt. Which is best for canning?

A tea towel at the bottom of your pot achieves the same result. Much less hassle too.

Actually that is not a safety recommended practice. There is a reason the jars should not touch the bottom of the pot. A tea towel is not an appropriate substitute

No. The water doesn't get hot enough for that.

With a jar lifter specially made for canning. You can find them in the canning section of the big box store or online. If you are asking this question, I am guessing you have never done any canning so I suggest you do your reading research before proceeding.

No you need to use the specific racks that are intended for your pressure canner. This is a quick fix for the water bath canner

Why not put them in the strainer? They're off the bottom and can be lifted out

Because that isn't how canning works. You need the jars to be submerged and they need to sit flat. Strainers are rounded and uneven on the bottom. Best to do a bit more research before you attempt to can. Also best to have the proper equipment. Especially if you don't know what you are doing in the first place. I, for one would love to see you try and lift a strainer out of a large pot of boiling water that contains jars full of jam or pickles. Not happening. Especially since those jars must be completely submerged with at least one inch of water over their tops. I wonder how you are going to lift that out? Pretty sure you aren't.

I see what you mean and i should specified the short jelly jars. I have the same stock pot with the flat bottom strainer insert (the one you said you use to blanch in). Just thought a few jelly jars could sit right on the strainer insert with enough water to cover the jar instead of lifting out pasta you're just removing jars.

You have to put the jars under the water by 2 inches. The insert will make the pot smaller and it will leave too much room at the bottom of the pot.

No this isn't the type of rack that is used in a pressure canner. You should use the plate that was included with yours. If you did not get one then you will either need to contact the manufacturer or you will need to purchase one separately.
