Today I am making and canning home made "Spam"
This is NOT a USDA approved pressure canning recipe. My kitchen My rules
Ingredients. Below is the oven method, I pressure canned these pints for 75 Minutes.
5 lbs - Pork Shoulder (ground)
1 lb - Ham (ground)
2 TBS + 1 tsp - Tender Quick
3 TBS - Sugar
3 TBS - Corn Starch (Clear Jel of pressure canning)
1 TBS - Kosher Salt
1 Cup - Cold Water
Directions
Mix Tender Quick, sugar, cornstarch, Kosher salt and cold water together until everything is dissolved.
Combine with ground meat and thoroughly mix.
Spread mixture into 2 - 9x5 loaf pans and press firmly to remove air bubbles.
Tightly seal with aluminum foil, place into a water bath and then into a 250º oven for 3-3.5 hours or until they reach an internal temperature of 155º.
Remove from oven, place a heavy flat object (I used a brick) on top while still hot.
Let thoroughly cool, then place into the refrigerator with brick overnight.
Remove SPAM from pans and slice as desired.

I make something simalar to this sometimes using chicken and pork and stuff it in a plastic pop bottle, very tasty and much more economical than the tinned product

Good morning. I am writing to you from the Dominican Republic and I am interested in knowing what the final result would be if I use cornstarch and not clear jel in the preparation of your recipe. It's important because I can't find clear jel here..

Good morning! If you are canning it, I do not know what it would do, normal cornstarch reacts differently to heat than the clear gel does it gets thick immediately so it's hard for the heat to reach the middle of the jar. So it's not recommended that we use it for canning. Now if you are cooking it in a loaf pan to eat within a week, using regular is completely fine. As I always say, your kitchen your rules. If you do can with it, ALWAYS check the smell and cook to a food safe temperature when you open a can. I had to get my gel from Amazon.

I get mine off Amazon 2 bags super cheap, but you can also get it this time of year (big game hunting season) at walmart or a sports or farm supply store that sells jerkey making supplies.
