Yes you can use banana leaf too but you won't get the beautiful pink colour

When l try to make jackfruit paste, it does not become exactly like yours, it remains little thick, what should l add to it to become paste like you have shown?

You can use a mixer for a fine paste,you can add a little water if required but not too much.Also depends on the variety of jackfruit used
