To make this almond butter I soak my almonds overnight. This make the nutrients bio-available and the almond butter much healthier. This is a great snack on and off keto and many flavours can be made from it. I have a couple of ways to make almond butter. There is also phytic acid in the almonds, soaking and rinsing them gets rid of that.

With peanut butter I've found that the more the peanuts are toasted, the more easier it is to grind to a creamy texture completely. Is that the case with almonds as well? I don't really like the idea of tiny flecks remaining in there and would like it with a smooth texture.

Jagjot Anand probably you are right. But almonds are a little harder than peanuts. The three things that work for me are: a powerful blender, lots of fat (ghee) and working with it while it is still warm. I have got a good consistency in my normal blender as compared to a food processor. 👍🏼

Sonal's Food I've only ever used a blender as well. Was able to get away with adding very little oil while making peanut butter. I'm gonna try with almonds this time and report back.

Jagjot Anand since fat is not a problem on keto, try it out with ghee. I like how it remains homogenised.

Sonal's Food I'd actually added cold pressed peanut oil to peanut butter. :D sure, ghee sounds like a good choice as well.

looks so yummy but i would like it less runny and can i use coconut butter or olive oil as i like stuffing celery and having it as a snack

Jane O'Sullivan sure you can. I land up adding a lot of fat since in my blender to get a smooth consistency you need that much liquid(fat)

It should stay good for a couple of months easily since it is made with almonds and ghee. But I keep it in the fridge.

Almond skin isn’t an issue? Doesn’t it hinder nutrient absorption?

Ideally you should soak peel dehydrate and then grind. But that is a chore most people will not want to do. I mostly make mine without soaking these days.

Once you let it air dry for overnight then at what temperature and for how long did you back it in oven? Not clear in vedio.

You can put the soaked almonds in the oven directly too and let them dry out inside out at a low temperature.

Yes. If you use the food processor it will work without oil. But be patient it will take a lot fo time.

Soaked almonds germinate hote hai aur pachte wakt unke say nutrients body absorb kar pati hai.

Priyanka Prashant The food processor is kenwood but I would not recommend that as the replacements are not available in India. So I broke one jar and cannot buy another one😔. The microwave is Panasonic I think. Working fine so far.

@@nw3877 or what? You'll school me on how healthy it is to 100% eat pure refined fat? The leading cause of heart disease is saturated fat, and ghee is 3/4 saturated. Ghee is horrible for you, even worse than butter, because it literally is butter, with milk solids removed, but I'm guessing you're going to challenge me on that too though?

@@JuGGerJuGGs YES ! Not saturated fats necessarily. Eskimos/Inuits diet contains saturated fats too a lot. Yet they didn't have heart diseases until modern carbohydrate rich diet entered their culture. Many tribes also use Coconut and it's oil as staple yet they are fitter and healthier than so called modern humans. Instead, the so-called “heart-healthy” industrial vegetable oils rich in omega-6 and artificial trans fat are found to be linked with serious health issues. Studies show that trans fats lead to insulin resistance, and inflammation, raising the risk of heart disease [ 4, 5, 6 ]. These are soybean oil, canola oil, sunflower oil, corn oil, margarine, and the foods that contain them. it’s important to consider the overall composition of foods rather than focusing only on the individual nutrients they contain. @@JuGGerJuGGs Is Sugar or Fat Worse for Your Heart? Fat clogs the arteries. Eat less fat to keep your arteries clean and your heart healthy. Based on the recommendations of health and nutrition experts, that is exactly what Americans did for decades. What happened though, was unexpected. Despite eating less fat, Americans gained weight at an alarming rate. And instead of less cardiovascular disease there was more. Sugar: The #1 Enemy in American Diets The Dietary Guidelines Advisory Committee, an independent panel of experts who regularly make evidence-based recommendations to the federal government, identified sugar as the prime enemy in American’s diets. A large body of research showed that sugar is even worse for your heart than saturated (bad) fat. Guidelines now suggest Americans limit added sugar to roughly 10 percent of daily calories, or about 12 teaspoons per day. Currently, we consume 22 to 30 teaspoons of added sugar daily, half of which comes from soda, juices and other sugary drinks. In addition, the previous recommendation about limiting total fat intake to 35 percent of daily calories was removed. Eggs and shrimp were removed from the “don’t eat” list. The Fat Paradox Explained Heeding research findings of the 1960s, skim milk replaced whole milk in American homes. Cereals replaced eggs on the breakfast table. Low-fat products filled the grocery shelves. Then why did the incidence of heart disease increase? First, eating less fat means eating more of the other two remaining nutrients-protein and carbohydrates. Carbohydrates such as bread, pasta, cake and cookies taste great, so “carbs,” for the most part, replaced fat in our diets. Second, most of the fat/cholesterol in our arteries does not come from our dietary intake but from particles produced in the liver. Obesity and the metabolic derangements that come from it are the primary cause of fat build-up in our arteries. Nutrition experts now recognize this fat paradox and dietary recommendations have changed accordingly. What It All Means for You The Dietary Guidelines Advisory Committee emphasizes the health benefits of the Mediterranean diet which consists primarily of fruits, vegetables, nuts, whole grains, fish and moderate levels of alcohol. Consider these recommendations as you plan your menu. Limit added sugars. Healthy eating patterns, in combination with regular exercise, are the keys to avoiding heart disease as well as other chronic diseases. As long as the fats we eat are primarily healthy, fat (healthy) isn’t the enemy anymore and never was.
