After exploring Barbados and many aspects of the island over the previous several days, I knew there was one thing I needed to finally dive into: black pudding and souse. This is one of the national dishes of Barbados, and I’m about to show you why!
My buddy Craig took me to meet his mother Brenda, who would be showing me all the steps to making this national favorite! This sausage dish consists of pork, vegetables, chilies, and much more, comes with a number of delicious sides!

Back in the day, slaves made the sauce, or souse, with blood. They don’t use it anymore. But in the black pudding, they use pig head, sweet potatoes, onions, marjoram, and thyme. They also use chilies, cucumbers, onions, limes, parsley, and more for the souse!
She’d bought a whole pig head at the market, which they slice down the middle. It still contained the tongue, brains, and ears, all of which I loved. We also had the maw, or stomach; trotters (feet); and intestines.
She showed me how you clean the intestines and are ready to stuff them. She then salted the head, cut off the ears, and squeezed lime juice over the head to further tenderize it. Then, she added the ears and pig feet back into the container and added some vinegar. She’d let it marinate overnight and add peppers to it.
I took a small bite of chili pepper, but it was way too hot! Then, she started working on finely dicing the onions, cucumbers, chilies, and parsley, which is for the souse. She also added lime juice. I tried a bit. It reminded me of a spicy tabbouleh! It had my mouth burning!
Then, she started peeling and grating the sweet potato. Then, she ground the onions, shallots, potatoes, marjoram, and thyme in a machine.
The mixture was very tasty! This was a small sample of what we’d use to stuff the intestines tomorrow! Then, she added salt, sugar, and pepper. The aroma was unreal!
Then, she adds a browning syrup in place of blood to make the mixture dark. Next, we mixed the peppers, cucumbers, onions, and parsley in a food processor for the souse. I tasted it; it was fantastic!
The next day, we returned to finish everything! I started with some fresh coconut water, and then Brenda cleaned the pork, including the meat and the stomach. She layered it inside the pressure cooker and added cinnamon, cloves, chilies, salt, and bay leaves. Then, she added bundles of thyme and marjoram.
She put the trotters and head pieces into another pressure cooker with more spices. It already smelled so good! It would take 30-40 minutes in the pressure cooker. She’d add the cooked pork to a container of salted lime water.
The pork broth had a nice cinnamon flavor. The meat was all falling off the bone! She added the broth to the mixture from yesterday, which she then added to the browned souse mix from yesterday.
She baked some in a casserole dish as a loaf. Then, she tied one end of the intestine, put the other end around a funnel spout, and added the un-browned souse. Then she tied the ends together and boiled it. Then she repeated the process with the browned souse for the black pudding!
She juiced a lime and added it and parsley to the pickle mixture, which was amazing. She adds it to the breadfruit, and cu the cooked pork to the pickle mix. She removes the fat and the outer layer of the tongue and adds the pickle. Then, after 6 hours of prep and cooking, it was time to eat!
The white pudding was so flavorful. I loved the potato and spice filling. The steam pudding had a sweetness from the cinnamon and cloves. I loved the lime juice throughout, and the breadfruit blew me away!
The black pudding also had a similar sweetness. And the actual pork was tender and juicy. Then, we finished with coconut water and mauby! It was all phenomenal!

David, I've been following the vids in your Barbados series and I had to comment on this one. This was amazing! So educational! I could feel the love that Auntie Brenda put into that souse. And I really appreciate that you are treating our history and culture with respect. Never once have I felt like you viewed us bajans as caricatures. At every turn, you've treated us with the deepest respect and connected with our humanity. You came here with an open heart and mind and allowed yourself to experience our authentic culture. I wish that every visitor that came to our shores could take a leaf from your book. Please let Auntie Brenda know that she's getting much love in the comments! She's amazing. I love this, It took me back 50 years but this is real pudding n souse. When I’m home they use the pig meat for souse but it’s not the same. If you make this for sale let us know because I’m sure there’re others who would love to have this old fashioned souse. Thank you for this trip down memory lane!

I’m from Guyana we also make black pudding and souse but our black pudding is made with blood and rice with lots of marred man pork basil and thyme it so amazing to see you make your traditional food look good enjoy ma’am

I gotta say. My favorite thing about Davidsbeenhere (Other than his incredible massage videos,) is how much YOU, David, appreciate and ACTUALLY enjoy the food. You are: 1. David so far I've watched 6 of you vlogs on beautiful Barbados cuisine and I have to say Aunty Brenda is the "BEST" . I love the way she explained from a - z about this delicious delicacy . Her surroundings are clean , warm and very welcoming not to mention her personality . 😲 OMG this brings back memories of my childhood, I had no idea the amount of work that went into this dish because I've never made iteven as an adult. I have a taste Breadfruit or cornmeal cucoo with curry flying fish 🐟 or bull jowl with some Maulby. 🇧🇧🇧🇧. Island 🏝 in the Sun 🌞.I really enjoyed your Bajan series.. I have been vacationing in Barbados since 1964 and have never had curry flying fish, but it sounds yummy though. Do you know of any restaurants that serve it? I will be in Barbados for three weeks starting on February 25th.

Oh my God ! I'm a Trini' Have eaten blood pudding many times; but never knew how time consuming it was. In Trinidad though, after the pudding is prepared and boiled, the servings for the table is being fried before consuming. Usually served with home made bread. A treat for the "soul"👍 Hmmm. !!!!!!! Good stuff '

In Barbados we fry the The Puddin the next morning if it is cooked in the belly . If steamed it is microwaved .

One oof the best black pudding you can experience is that of any Caribbean individual that is authentic of such.Many have gone to the great beyond but their legacy lives on.I know how to but my deceased mother was boss in it that so often many purchased from her to take overseas.I glad I see this without blood .Thanks Ms Bajan for your recipe will try to use it that why but in truth and reality there are some great pudding maker on the islands of StKitts-Nevis,male and female.Dem just good.

Just watched the video. That was interesting to see how she substituted the browning for the pig's blood. Two days to allow the taste to develop. I would definitely eat it. Pass on the snout and the ears though. Craig's mom did a fantastic job. I am surprised that David didn't use his hot sauce though, but then again, maybe he didn't need it. Good thing though. David, [part 2] I suspect that very few of us who have lived in Barbados or the region have had a hands-on experience with this kind of days-long traditional preparation and cooking. Everything about it is hard work, patience, care, and love. With so many people no longer cooking, we must celebrate those who continue great traditions. I don't say this lightly: I think that you have recorded something that is fit for a cultural archive or museum.....educational content for history classes, geography classes, Food & Nutrition classes, tourism and hospitality schools, and even a museum.....There are many arts and forms of knowledge (this herb is good for this and that spice can be used in x ways....often medicinal and not just gustatory value) that are slowly at risk of dying.....Bloggers and videographers can help to save them and to revive them and to repackage them for global audiences. On behalf of 285,000 Barbadian residents, I say "Many thanks, David"!

I have been vacationing in Barbados since 1964 (except for the last 2 covid-cursed years) and have never had "Pudding and Spouse". There's a little restaurant not far from where I stay that offers it every Saturday. After watching this video, and going to Barbados in two more weeks, I plan to head straight to the restaurant for pudding and souse! Yummy!

I really enjoyed looking at this old-time food prep for weekend treats in the Eastern Caribbean....but why was this man allowed to cough without covering his mouth...then put that half-eaten pepper back in the bowl??

Fantastic job ☺️ to the lady who prepared the pork and done the pudding. It's so much work to prepare proper pork and steam pudding. Souse looks so nice, definitely know it taste so good. 💛💙🖤🇧🇧 Haven't watched your fab vids in order but THIS one with Brenda, Craig's sweetheart😍 of a mum is my FAV, Dave! L💙ve your respect for #weculture. I am aware of how much work it is but have never watched the whole puddin & souse process before. My Mom made steamed puddin without the traditional casing or belly (as most do nowadays) with NO food processor. She put us kids to grating the potato.🤦🏾‍♀️ The souse she also put in a pressure cooker. More like this with cooks like Brenda's amazing knowledge. Love how our ancestors made refuse the delicacies which endure. BTW Cou Cou Village does this traditional way. #bajan

Watching ..now...interesting to see how blk pudding is done ,,fresh seasoningd vege and pig's head souce....In most cultures most of the animal is used.. I know as always this would be very informative and those foods would be so delicious ...Carribbean style. As always David thanks safe journey.

@@thedadof2880 I love souse, how did it turn out? You have to prepare it really well. You can make souse with chicken feet too. In Trinidad we make it with chicken feet, pig ears, snout etc and cow heel…. It’s sooo delicious!
