Homemade Buttery Caramel Popcorn WITHOUT Corn Syrup

Күн бұрынThis caramel popcorn recipe is so delicious and made without corn syrup! It's perfect to serve around the holidays or Christmas time and great for gifting!
Ingredients:
▢¼ cup popcorn kernels (makes 4-5 cups popped)
▢2 tablespoon oil or butter
▢½ cup peanuts
▢½ cup almonds
Caramel Sauce
▢6 tablespoon melted butter
▢½ cup brown sugar
▢½ teaspoon salt
▢2 teaspoon vanilla extract
▢1 teaspoon vinegar
▢1 teaspoon baking soda

Nothing wrong with corn syrup. Corn syrup and high fructose corn syrup are two entirely different things.

I have not tried! I wouldn’t since it’s very temperamental. You can’t taste the vinegar!

I notice you cut the corn syrup, what does the corn syrup do ? I like your recipe without it but what am I giving up ?

Corn syrup acts as an "interfering agent". It contains long chains of glucose molecules that help to keep sucrose molecules from crystallizing preventing a grainy caramel.

@@alekashunk6399 Thanks for your good explanation of the role of fructose in grainyness which may be ok for pop corn but a problem with other sweets. So are there other substitutions for fructose? While we are on the subject, what’s the role of baking soda?

The corn syrup makes the caramel EASIER to work with however it's terrible for our health so I leave it out.

We put the carmalaized popcorn in the oven at 200 for 4 minutes and it all burnt

Haven't you ever noticed commercials on TV the music so loud you can't even hear what they're saying sometimes I have a pet peeve about that it's hard for me to watch videos for the music so loud as loud as the person's voice because I really want to learn what the person is cooking I did make it though and it turned out good in the oven in my husband loves it thank you I wasn't trying to hurt your feelings or criticize you in a bad way ❤️

Was that some kind of magic trick? I mean when you put your sheet pan in the oven it was silver and "Presto"it was black when you took it out. Save the cooking for us professionals sweetheart. Lame

Nice catch. I didn’t see that. It also looks like there is twice as much Carmel popcorn in the black pan, then there was when she put the silver pan in. Did she make two batches? I really wonder if this can work without the syrup. Vinegar seems like an odd substitute for something that is supposed to be sweet. Personally I like a little burn on unflavored popcorn with only salt. It adds a little spice, like the bitterness in dark chocolate or coffee. As long as there is enough white popcorn too. Don’t want overkill. But that’s me eating popcorn without all the sugar and fat, so I can snack healthier. My mom used to like burn on toast. So I can’t be the only one.

At times I let unsweetened popcorn replace a meal instead of a starch like bread or pasta. Just have meat with it too. I read somewhere that popcorn contains its own protein. That seems hard to believe.
