Ok this may sound crazy, but I bet I can't be the only person doing this: chaat masala on popcorn. Like, stovetop popcorn drizzled in butter or olive oil or the like, sprinkled with chaat masala and grated parmesan. I know, I know it might sound odd but it's fantastic.

I have always just purchased premade chat masala from the Indian grocery store. I have all the ingredients on hand so I’m going to give this a try. I’m sure the freshly made chat masala taste way better than store bought. Thanks for the recipe! I’m also going to try the chickpea rice dish but with brown rice to make it even healthier.

I dont use hing very much in my cooking and I know indian regional cuisines that dont cook without it so I guess it is a personal preference 😊

I am going to make this this weekend. I just received my Amchur and Black Salt yesterday (already have Hing from another recipe), and keep it on hand. The Amchur is so, so tangy, and the black salt has a pungency reminiscent of boiled eggs, but immediately melts into a super savory, delicious experience! Thank you for sharing!!

I made this for dinner tonight, both the Chaat Masala and the chickpea curry. I didn't have any black salt so I left it out, and used Anaheim peppers instead of Bell pepper. At the end I put a dollop of yogurt on top of each serving. This was really fabulous! This is the first time I've used Chaat Masala - thanks for sharing the recipes and your experience with me.

I leave out black salt too. I have it but I can't seem to be getting used to the sulphur aroma it has. I just can't get over it, it just smells like rotten eggs to me. Once, I was adding black salt to something and my wife immediately went: "Ew, what's that? It smells like toilet." I couldn't help but agree. We're just not used to it.

I couldn’t wait to make this. So despite having no red pepper, I went ahead, making fresh rice as I went. I added a Zucchini from the garden( I’m in Australia!) in place of the pepper and I really liked it with a little chopped fresh tomato on top. Its a keeper!

Very pleased to see you re-use Geeta's chutney jars for your spices. So do I. The hexagonal shape is not only pleasing but the jars fit together nicely on the worktop. I need to get a new mortar & pestle, I broke the last one but the first thing I will make will be chaat masala. I have always bought it ready mixed before.

these are not Geeta's chutney jars. If you watch my kitchen remodel video you will find that I bought a whole box of these jars for myspices. I dont like shop bought chutneys! 😊

Oh wow! That looks delicious! Can't wait to try it. I'm curious to know the brand of your non-stick skillet. It appears to be a quality piece, and I've been procrastinating over purchasing one for 6 - 8 months. My experience is that dry roasting spices in non-stick pans scratches them. I'm in the US, so it may not be available here anyway. Any info would be appreciated. Thanks for sharing the recipes!

Thank you for another great video! Quick question: is black salt the same as smoked salt, or volcanic salt or something completely different?

It is actually from India and close by regions and it is also called kala namak or himalayan salt, so its unique and the flavour is pungent and sharp. So the answer is yes it is completely different to any other salts you have mentioned.

Thank you for the recipe. How do you decide the exact proportion of the ingredients to make the exact quantity along with the taste as desired in the chart masala or any other masala ? Is there any calculation behind it or it is just experience and guesswork ? Thank you .

awesome! Now I just need to find black salt. If my asafetida is too bitter raw, Is it supposed to add that to the chaat or can you dry roast it a bit to remove a bit of bitterness or it doesn't work that way?

you cant dry roast it and that is a small quantity so its not overpowering in the spice mix

Thanks for the recipe Chetna, I love trying your meals (veggie ones). My wife has a tummy prob and cant eat onions, could I use celery instead? We have just purchased some Asofoetida which I believe is a substitute for onion/garlic and you used in the chaat. Just wondering otherwise I am eating alone.. Many thanks and stay well.

Dave, I had to go without onions for a long time due to tummy problems and if your wife can have some fennel bulb, try using a pinch of the hing in some oil and cook it thinly sliced. If you take it to a dark gold or farther, it is just like onions but easier on the digestion.

How/ where can one obtain really fresh spices? one's in supermarkets always seem old and tired ?

I probably would add a small amount of water with the cold rice to refresh it a bit. No doubt, I would rinse the mortal in which the chaat masala was made and use that water (or rinse the chickpea can). I suppose I am a bit OCD on that front. :)

The steam from the vegetables is enough to wake up the rice but we all have our ways of cooking for sure!

@@FoodwithChetna yes, but sometimes I find it not enough when the rice has been in the frig a bit longer (dries out some) or when I sense I need to crank up the heat because the cold rice has lowered the overall temp too much. and my obsession to use every residue of spice mix and drop of aquafaba.

It took me forever. to realize the funky sulfur egg scent came from the black salt and not some spoiled food. No one ever mentions that!

None of my books are vegan because they are all 90 % vegetarian and all that veg food is mostly vegan and the very few that are not are easily adaptable

No, what it's dangerous is leaving it cooked too many days in the fridge, because it can grow bacteria you can't see or smell, as opposed with other foods that you can easily tell if they have gone bad. But 2-3 days it's okay. And specially for fried rice one day old rice works better because it's less moist.

Indians have been reheating it for ever and it everyone survives. That is applicable to take away rice in my opinion

Cool it down quickly and reheat it before eating. Don’t let it stay leftover for too long. Nothing is risk free, but those things greatly reduce it.
