Hey guys! as requested, I am sharing homemade coconut vinegar recipe. Coconut vinegar is made from fresh coconut toddy and takes just over a month to make it. It is fermented naturally by giving very light heat. Also note that the bottles should be cleaned and sun dried, and the residue should be discarded. Its about 5 years since I started making vinegar at home and I do not use synthetic white vinegar - I do not use them in my recipes nor personally as I make organic coconut vinegar at home which has tons of benefits and probiotics. Since our childhood, we see this vinegar is made, but my mother use direct sun I stead of stove. Once finished, it's as clear as water. In Maldives, this was so common.

You forgot to mention that other than Kerala, Goa has plenty of coconut toddy, which we Goans use to make Vinegar, totally organic and fantastic. In our house itself it is made. Goan Coconut Vinegar is more famous than any other vinegar.

Till how long have we to keep changing the bottle? We make coconut vinegar in Goa too. But instead of glass bottle it is fermented and stored in an earthern pot. Thanks for sharing the recipe.

A few I saw would say you can keep 3 to 6 months with the way they make a vinegar from coconut. If this process would indeed make the coconut vinegar for years, then this must be a Rolls Royce of all coconut vinegar making out there 😍😍😍

Coconut vinegar is also made in Goa. But the toddy is put into a jar with a coloring agent like burnt rice paddy. Then a red hot piece of terracotta roof tile is emersed into the jar. The whole process takes longer than 3 months. In UP, they make vinegar of sugarcane juice. The bottle is just kept out in the sun for couple of months. The longer maturation results in darker n sourer vinegar.

I can still remember in my childhood days we used to drink plum sap but coconut sap is absolutely a new thing for me! Though it is very difficult to make Coconut vinegar at my home! At our place to make pickle(Murraba) perfectly we use to keep it in vessel and cover it with black cloth and then put the vessel directly under the sunlight.. like wise can we put coconut toddy under sunlight for hitting process? Just giving a though as putting it on stove is quite disturbing for cooking process.

i kept around 2 lits of toddy in a bottle for around two years untouched. the bottle cap was not fully closed . Now the liquid inside is 95 % transparent I want to know weather the liquid is vinegar or not

Hello Nisha Thanks for this unique and 1st time recipe. Have two questions: 1. Instead of fresh toddy, can we use fresh tender coconut water + the soft white kernel. (Next to impossible to source fresh toddy in my city) 2. Placing the glass bottle in the middle of the stove can be inconvenient or not possible if it's a 2 or 3-burner stove. So instead, can one place the bottle next to the stove.. thereby ensuring the mild heat?

Nice video. Can the same fermentation be done in sunlight instead of next to stove? And can we cover the mouth of the jar with a stain or breathable cloth instead of putting loose lid? What about using an earthen pot? Please reply as many people have asked similar questions before as well.. Thanks👍

I’m sorry for bothering u with the same question again, but where do u get unfermented toddy from? Kallu shop will sell fermented alcoholic toddy right? We have plenty of coconut trees in the backyard but our coconut tree climber does not collect the nectar.

You may need to dilute it. Just like using apple cider vinegar. Or you can add 2 tbsp to salads. I personally add in salads. Hope this helps.

I am a West Indian we have lots of coconut trees but I have never heard of coconut toddy. I wish to see how it is collected, if it is possible.
