You don't need a knife. Just push the coffee beans into the oranges. I've put everything in the jar. 500ml alcohol of 94% degrees, 800ml spring water, 160 gram sugar, 2 oranges with 22 coffee beans each. And wait 44 days. Yes, I prefer something less sweet. The result is a clear liqueur. I will try your recipe in the future.I think if the orange is above the vodka, the liqueur won't have a bitter note.

Tried it with 500ml 79% alcohol, later added ca 300ml water with 100g white sugar. Maybe a little too sweet for my bitter taste, but overall very good. The taste reminds me fireball. At first comes the sweetness with a touch of cinnamonn and gingerbread, later the orange with alcohol tingeling. Feels like christmas.

@Spectacular-cuoredicioccolato my mum has been asking around our family and friends about Breton 44. Our family is true,'Breton' from the Amorica region. We are Celtic but haven't heard of it. Anyway, it turns out that people from Nantes know this liquor, but Nantes is not strictly Brittany. However, history says that the people who now live in Nantes were pushed out of Brittany towards where they were now but the recipe remained. You really found something different and interesting. My great grandfather had an illegal distillery on the farm, and every sugar beat had a bottle of pure alcohol buried next to it 😂 We do what we do to do to survive 😁😂

The citric oil cloud is called the ouzo effect. What happens if you add everclear to the orange rum? Could you experiment in a glass? A few years ago I did the orange in the everclear and plonked in the sugar lumps, no water, no boiled syrup, as even distilled water would cloud it. It is great for rumbabas and brandy butter. I will try your recipe with vodka! In time for Christmas! Thankyou!

Mamma Mia, that was pretty technical, a pretty sight and very original. @anonnieman
@anonnieman 2 жыл бұрын
Maybe with the airlock in place it would, because without the alcohol and with too much oxygen the orange would probably rot. I don't think the beer would produce enough alcohol(vapour) to really extract anything, so you would probably be better off just putting some zest in your most.
@Spectacular-cuoredicioccolato

@Menuki

Nope, there way too much biological activity going on with beer, it will rot. Being sealed with concentrated alcohol vapors pretty much prevents all that
@cristianespinal9917
@cristianespinal9917 2 жыл бұрын
It'll rot and probably infect the beer. If you want that flavor, you can use high-proof liquor to extract the oils into a glass like he shows in the video. Then pour the oils into your beer after fermentation is complete, but before you package it. You can even pour some of the spirit in if you want to fortify the beer.

@@Spectacular-cuoredicioccolato We tried 3 recipes. Each with 500mL of alcohol: for 2 of them we used vodka, for one we used tequila. The first vodka recipe was 2 lemons and basil. We just cut small slivers from the lemon and stuffed it with basil leaves inside the slits. Let it sit for 44 days. It was good, but not very flavorful. The second vodka recipe was the exact same as the other, but we added 2 cloves of garlic to the lemon slits, and whole peppercorns into the vodka. It turned out very Spicy but will be great in Bloody Marys. For the tequila recipe, we poked holes into 2 limes and that was it. It turned out bright and fresh and delicious when you add a splash of lime juice to the drink.

How big are your sugar cubes? 3 of mine weigh 7g. Around 108 needed to get 250g. Is that right? It is about 1 1/3 cup of sugar by my measurements. Unless I am reading the wrong ( g )

I don’t know, at the end I used the classic sugar to be sure of the quantity. The dimensions change from countries and from companies 😬

You can put orange inside liquid- resoult will be the same. And even strong liquor will be transparent. Also- as far as I remember - you should always pour strong alcohol into the water, not water to alcohol. Maybe that's why your liquor was not transparent.

The liquor will actually have a more bitter taste, thus the hanging of the oranges. The alcohol does not dissolve the majority of the chemical compounds known to cause the bitter taste of orange peel with this method. While you could get a similar result, this method or fractional distillation are the best ways to achieve maximal quality.
