★ INGREDIENTS AND RECIPE:
INGREDIENTS for 4/6 servings
1 and 3/4 oz (50g) onion
1 and 1/4 oz (35g) celery rib
2 oz (60g) carrot
5 basil leaves
1/2 cup (50g) of grated Parmesan cheese
3/4 tsp (5g) of salt
1 egg
1 and 1/2 lbs (700g) of minced meat
2 and 3/4 oz (80g) of sliced Scamorza or Provola cheese
3 and 1/2 oz (100g) of sliced ham
RECIPE
Clean and dice the onion, celery, carrot, and basil. Chop the vegetables coarsely in the food processor and add them to the minced meat. Add the egg, salt, and Parmesan cheese. Mix everything until you get a soft, well-amalgamated mixture, spread it on a sheet of paper, and cover it with another sheet. Roll it out to a thickness of ½ inch/1 cm with a rolling pin. Remove the baking paper on top, adjust the edges until you get a square, and add the sliced ham and cheese. Roll the meatloaf and wrap it in parchment paper. Bake in a preheated oven at 350°F/180°C for 40/45 minutes. The meatloaf should be well browned on the outside; the water that comes out of the meatloaf should be clear. Remove the baking paper, set aside the cooking juices, and serve it sliced still warm, garnished with its sauce and a side of salad.
