Moules-frites - a Belgian / French classic that never fails to impress.
Had such a great time filming this video - was down in Cornwall (English coastline) and thought that this would be the ideal opportunity to make Moules-Frites for all of you. I do this every year and it is always so much fun and most importantly, INCREDIBLY tasty.

Ingredients:
Serves 2
1kg mussels (cleaned)
1 large shallot (finely chopped)
50g salted butter
Few sprigs of fresh thyme
2 cups white wine (or stock and vinegar if no alcohol)
Handful of parsley (finely chopped)
3 large potatoes (Russet, Maris Piper or King Edward)
3 tbsp vinegar
Vegetable or peanut oil for frying
