It is also pretty darned good if you add 1 teaspoon of espresso powder to the chocolate powder. Chocolate loves espresso.

I'm from upstate SC. I came for the caramel sauce. I knew 2 ingredients, but couldn't remember the rest. Also the chocolate recipe is nearly identical (within 95% so) of the vanilla sauce for bread pudding. The only exception was the recipe I use used an egg to facilitate thickening along with flour. Thickens relatively fast.

Yes a cream above 80*C will help in non separation of the cream. Cold cream might separate. So definitely warm cream at least
