Yay for spring harvests! I have found that when making vinaigrette I like it better when I start with hot water and seasoning, let that sit for a few minutes, then add vinegar and oil. It makes it harder to use the convenient measurements on the carafe, but results in a more flavorful dressing.

Good morning! It's always so nice seeing your videos each week. I started making my own salad dressing this past year, and I wonder what took me so long.😂 If you use Italian seasoning, you can make your own mix for that, too. My family likes my blend, and I keep them supplied. I've also made za'atar, poultry & pumpkin pie herb/spice blends. They are so easy and I usually have everything I need. I'll have to try a veggie dip mix blend to my pantry. Thanks for sharing your life with us.

I love watching your videos after bible study and worship. It’s my little Sunday treat. We have been eating a lot of baby greens out of our garden as well. I like to freeze dry them, grind them into a powder and add them to our meals in the winter. You can’t taste it. Your salad dressing looks delicious.

Thank you for all the great mixes recipes. The homestead is looking lovely and alive. I came across a recipe for those who don't homestead or garden but want to try something new. Take store bought frozen veggies and dehydrate them. Grind into a powder as fine as you'd prefer. Add this powder to rice, potatoes, soups ,sauces and whatever else you'd like for a little added flavor and nutrition.

The thing I love about my homesteading youtubers this time of year is seeing the differences in the environments... and getting jealous of all the fresh produce.😂 we are in Northern Wyoming and can't even start planting for another month (several inches of snow expected this week). Enjoy those fresh radishes for sure!!

I had forgotten about dandelion jelly. As children we picked flowers in the field before mowing. My mom had my cousin and I pick the leaves, which became a game of whose pile was higher. This was a Spring event to add to food anywhere and everywhere. I loved it over scrambled eggs or on fresh bread with butter. Thank you for sharing the wonders of your homestead. Those baby chics are too cute.

Great idea: Buy a product you like, read the ingredients, experiment with making it yourself for a cheaper and healthier product. Yeh! Of course, you may need a freeze drier so you do not have to pay the big prices for freeze dried foods. But I bet on a smaller scale a person could use this strategy even without a freeze drier. Thanks for your lovely videos. God bless!

Good morning Jessica! I'm sure you do a lot of different things with dandelions as well. They still aren't up here in Atlin BC, Canada (just south of the Yukon border). I have made an infused oil with them & then used that for a salve or even in lip balm. The salve is supposed to help with arthritic pain but is a great moisturizer too.❤

How exciting to see the spring harvests beginning! Thank you for the link for the funnel. I didn't know they made this and will really enjoy having such a helpful kitchen aid. I also am learning to make my own seasonings. Another advantage besides skipping the chemicals is that you can adjust how much you need to use and don't end up with those little packets folded over spilling. I have also noticed that they seem to be using a lot more fillers in the prepackaged seasonings. Its always great to know exactly what is in our food. Looking forward to more canning and preserving tips.

Here in zone 4a I've had two garden harvests, chives & perennial onion greens. The only annual plantings that are up are some radishes (about 1/4 of them have their first true leaves now), self-sown lettuces, and a few edible-pod peas...but all are at least 2-3 weeks from harvest yet.

I never reused my pickled egg brine. I don't know why. I do use the brine from my cowbow candy to make pickled eggs. When I make brine for pickled eggs I always add peppercorns and fresh dill to the jar. Let the eggs soak for a few days and they taste almost like a pickle. It's so good on it's own or in potato salad, pasta salad, devilled eggs.
