Lost me after the gelatin and refined sugar, but good idea for making your own immune boosting vitamins. I would omit those 2 ingredients and figure another alternative.

Gelatin is a super ingredient 😅 contains great amino acids like glycine and other good stuff. Very healing for the gut and much more. Sugar is an antioxidant in itself not sure why everyone think it's the devil, just don't overdo it

convenience to buy for sure. But you also have to mention the many health benefits that comes from looking for the wild berries, using ur hands to pick the berries, the benefits from walking on different ground and the connection, the feel of the leaves and branches in ur hands the stretching and just the joy of being out in God Creation. for me any ways. cheers

What a great recipe! I love the gummy bear molds!! We also forage for elderberries, and make juice in a steamer juicer. Then we take 1 tablespoon each morning in the winter and also make jelly! I hope to try your recipe soon! 🍁🐿🍁

If you look up what the elderberry bushes look like when they’re flowering, you’ll be surprised and you’ll never unsee them. They’re all along the highway. I see so many in the spring. I propagated a few an planted them on my property

@@DutchAlaskagirlI live in zone 2/3 in Alberta, Canada & got an Adams Elderberry & a Bob Gordon Elderberry that have survived for 2 winters. I did wrap them in burlap the first winter to protect them. I think they appreciate some shelter from northern winds. We are also a high elevation so I’m crossing my fingers that they survive with lots of snow cover. This year I got about 1 cup of berries that the deer didn’t eat. They prune them each year😅

Have you ever thought of laying the first gummy tray face down on another one, so the oil you spray can be used in more than one, instead of losing it in a towel? Have you tried freeze drying them after taking them out of the molds? We make a syrup with cinnamon and ginger soo yummy. So much better and effective than the expensive store brands. Thank you for the video.

If made yourself good. Never, ever, ever buy COMMERCIALLY MADE gummies. All that commercially made candy is HARMFUL to kids. ALL OF IT. 😊

I’ve made elderberry gummies before, but they weren’t shelf stable. This is great. I’m going to experiment with these and make adult gummies by filling the gummies halfway, adding a couple of drops of Olbas Oil (a German remedy) and then add more of the elderberry syrup. Is there a way to use something that’s sugar free? I don’t mind the honey, but trying too stay away from sugar

If you can find sucanat it could be used instead of cane sugar. It has more nutrition because it is less processed. Or maybe try monk fruit sweetener; 1/2 cup monkfruit per 1 cup of sugar.

Great info. I am not sure about using sugar though. Processed sugar stunts the white blood cells which in effect makes up your immune system. Is there another why to not use proceased sugar?

We love using elderberries, and I've always wanted to make the elder gummies, but I just can't get past the white sugar. My guys don't get any white sugar and it's hard for me to put it in and on their supplements. I've always thought sugar suppressed the immune system and that seems counter intuitive.

Try replacing with monk fruit powder! It’s a 1:1 replacement and is an unrefined sweetener 😊

Heating honey to that temp looses benefits...Honey should not be heated rapidly, over direct heat. Basically, the hotter you heat it, the more potential for reducing nutritional value. Excessive heat can have detrimental effects on the nutritional value of honey. Heating up to 37°C (98.6 F) causes loss of nearly 200 components, part of which are antibacterial. Heating up to 40°C (104 F) destroys invertase, an important enzyme. Heating up to 50°C (122 F) for more than 48 hrs. turns the honey into caramel (the most valuable honey sugars become analogous to sugar). Heating honey higher than 140 degrees F for more than 2 hours will cause rapid degradation. Heating honey higher than 160 for any time period will cause rapid degradation and caramelization. Generally any larger temperature fluctuation (10°C is ideal for preservation of ripe honey) causes decay. -John Skinner, University of Tennessee

I don’t know what I did wrong. I followed the recipe exactly. It did get to exactly 260 degrees. I used beef gelatin. It started out extremely thick and got worse from there. It was extremely difficult to work with and I ended up just making a big mess. Any ideas why it was so thick?

I am wondering if this recipe would work by using monk fruit or other low glycemic natural sweetener (not artificial sweeteners). The reason that I am bringing this up is because I wonder if using regular sugar would actually undo the benefits of the elderberries. Any thoughts on this?

My understanding is that honey should not be heated over 110 degrees or it loses it's health properties. Do your research on heating and canning with honey.

Great effort however you destroyed your honey benefits by heating to that temp such a missed opportunity also you don’t need to spray your molds with anything. If your gelatin is working properly and your molds arnt old and paste their use date, few years and hundreds of uses, then skip the oil. Also watch the temp with your gelatin. Read up on the max temp for gelatin too hot and you will kill some or a lot of the gelatin gelling action. And citric acid is absolute last just before you pour into the molds. Also skim the foam off the mixture before you pour. You call them bubbles they need to be skimmed off with a spoon. It’s foam get rid of it. You also need to cure the gummies for 2-3 days to sweat out the moisture. It’s not drying, it’s called cure them. And not in the fridge it sits out on the counter dry cool spot. Not the fridge lol. But good effort. Just read up on the steps you’re doing and why, then you will understand what’s needed. Also the citric acids and sugar you rolled them in isn’t the best idea, very little citric acid because it will leach the moisture out of the gummy if you didn’t cure them properly. Make some changes listed and you will have a much better product.
