On this video, I smoked up some hot and fast baby back ribs on my Yoder YS640 pellet smoker. The total cook time was 2 1/2 hours at 375°. The rubs I used were from Victory Lane BBQ, Sassy Apple, Cherry Bomb & Garlic Jalapeno Season all. I glazed The ribs with Texas Pepper Jelly which was fantastic!

First time here but you’re definitely the guy when it comes to barbecue. It’s so easy to follow compared to other vids and as a 17 year old making ribs for the first time to impress my fam hopefully these turn out great i’ll let you know the results

I never remove the membrane. When I was younger, we had a hanging smoker, so the membrane was always left intact. Now it’s the way I like it, regardless of cooking smoking technique.

I definitely agree with you comment about the membrane. I have to work hard to get the membrane of of the spare ribs and so often the ribs are trimmed and sliced in a certain way so the membrane is in two or three pieces from the start. Cheers!

Joe, today I decided to try Baby Back Ribs on my Kettle. I will cook indirect, but high heat. By high heat, I mean 300-325, not 250. About the membrane, I was watching Matt at Meat Church and his pulled off in one piece and mentioned that never happens. It was a spare rib.

Hi Joe, I did some backs last weekend and I also found that the membrane came up in one piece as well. Way easier than when I do Spares.

Those look delicious. Thank you for your video. Im trying your fast method today. Hope they turn out like yours. This method is perfect for football Saturdays, when everybody comes over at noon and you don't have time for a 6 hour cook.

I have to say that your presentation was wonderful, I really enjoy the simplicity of the instructions that you gave. I am doing just a little bit of a throw off how much you did, I’m using sweet Vidalia onion dressing as my Glaze. Thank you so much for your instructions on fast and ribs dude you’re awesome.

Nice looking ribs and BB at that... You got a fever Joe?LOL Them suckers looked tender and 2 1/2 hours at 375.... I am getting to like the hot and fast. The Bronco I got is very addicting once you learn to dial it in. I can let it purr at 375-425 for hours at a time. Great video Joe...

Thanks Joe for the video. I am going to fire up my Masterbuilt Gravity Series. My two initial dishes were spatchcock chicken and balsamic bacon brussel sprouts. They have to go at 375F to get crispy bacon and chicken skin. I wanted to do ribs also and cornbread but I didn't know the cook time for the ribs at 375. You gave me my answer. I need to let the ribs go first for 90 minutes then add the rest so at 2 1/2 hours everything is done at once.

Holy heavy seasoning Batman!!! I unfortunately have doing only baby backs for the last couple years only because that’s what my Kroger has had on sale. Spares are just sooo much better and I have to get back to my roots. Aaaand now I just finished the video...hot and fast may be better method for baby backs. Thanks Joe!!

Those are some fantastic lookin ribs Joe. It's always baby backs for me, they're great ribs. I always turn my ribs over when I cut them that way I can see exactly where the bones are. Great video Joe, keep up the great work my friend.

I was a spare ribs guy one day my wife brought home a pack of baby backs from sams club. Been hooked on them ever since! More meat membrane is easy to pull off etc thanks for the video

Those look fantastic! I love me some baby backs. I hear you on the Jalapeno season all getting in your nose. I make an SPG with Ghost pepper, and it gets me almost every time. But the flavor is off the chain.

Joe, I did hot and fast ribs once by accident. My temp gauge was of by 60 degrees. Thought I was cooking at 275....lol ! Nice bones Joe !

Right on joe! Been waiting for this baby backs video haha. I also do spare ribs 99.9 percent of the time haha. I have a friend that does baby backs 100 percent of the time haha. Question: I did this method exactly with my pellet smoker set to 350. They looked ok when I put them in the foil wrap but I put butter, brown sugar, and honey in the foil pouch like I would if I were doing low and slow. When I opened them back up they had burned and adhered to the foil. Should I do something different? Or was it just the addition of the sugars that messed me up?

Never tried hot and fast on my Weber Kettle. Always afraid they might dry out but these look amazing. So what really is your preference on ribs? Low & Slow or Hot and Fast. Results seem the same. Great vid!!

Great looking baby backs! I like your hot and fast cook. From someone who cooks a lot of bb ribs, if you will cut them bone side up, your knife will slide through like butter.. you can see the bone on both ends.. just a thought 👍

Did you spritz at all? I rotate mine a bunch to keep them from drying out. I'm at 3800 feet above sea level so not a ton of oxygen compared to other parts. If your elevation is lower. I would try at 350. 🦃

You get plenty of smoke flavor plus the fat dripping off the ribs hits the deflector and creates such a good flavor. The chimney had smoke the entire cook time. 👍🏼

How could you get such a 'nice smoke ring' when you wrapped the ribs in foil? No smoke could get to the meat. 21/2 to 3 hours is not very fast.
