Definitely sit on occupied land (maybe Kings Landing) with a high defender advantage and let your Men-At-Arms replenish/refill. Then when the troops are full again, keep sieging to get that gold so you continue replenishing MMAs when sitting on your occupied land. Big advantage is the Iron Throne can't fund the war for replenishing MAAs with sieges like you can. They should eventually run out of money. Also, use some of that gold to recruit better knights.

Your army gets attrition damage if you move from one hostile county to another. If you don't fully occupy a county, it will also cause you attrition. Therefore it is imperative to find and siege down all castles in a county before moving to another, unless very special circumstances occur.

About the current size of your armies, you might want to split your armies and make them wait on seperate tiles (that you already sieged) so that it can grow back because if you keep fighting and sieging constantly in enemy territory it will never increase.

losing the tyrell alliance was a massive loss. I think if your son has land there's a chance you can continue as him if you die or lose but i'm not 100% sure about that.
