I remember watching Alvin's video where Chuck said she "If a BBQ place has a good pit master, they either have to offer them ownership or they open their own place... I want to open my own place". I'm so happy to see she opened her own place! It looks amazing! I will definetly have to visit when I go to Texas. I hope it will make Chuck happy that I flew in from the UK just to try her BBQ... and see my friends ;)

Can't wait to try it! My boyfriend and I drove from South Austin to get lunch there on a Sunday a couple months ago, but you had already sold out, which speaks volumes. You ladies still greeted us and gave us a complimentary dessert and green juice since you had sold out. (Both were great by the way!) We thought that was so kind and generous of y'all! We will make it back sometime to try the meats 😊😊

Everyone does it differently. So do what you think is good. There is no wrong way of trimming the fat off other than not doing it at all. Trim what you think makes it look good and thats probably good enough.

I like to see and support people who love what they do, are good at what they do and can make a great living at what they do. I enjoyed Chuck's video time while at Goldees, she has such a calm presence about her and now she is dialed in and focused at creating great food at Barbs. What a gentle soul and I love how she talks about her mom teaching her and now she teaches her mom. Her mom has a lot to be proud of. I'll make a trip to Barb's for sure. There is hot chocolate and it tastes good. Then there is hot chocolate using these Mexican blocks that tastes amazing. Imagining them being used outside of their traditional use makes you imagine how wonderful it must taste. Brings a tear to the eye of anyone who grew up with this hot chocolate. This is because it brings back childhood memories of time spent with your parents or grandparents. Hope I explained it.

Nice video! Also not sure if you realised but you can see it's a Goldees smoker at 17:52!

Relax, That list is extremely subjective and it's only one man that determines who's on that list anyways. That man hasn't even been to every BBQ place in Texas, some places have been thriving for 50 years and he hasn't been there once. Let that sink in.
