In theory, I would start playing the field once I had a free roll with the 5,6, and 8 covered with place bets. Once I hit two of those numbers in a row, I would put half of the winnings on the field bet and let it ride like you mentioned. It's just a way to increase your profit once you are in a great roll.

If game A has a 5.56% house edge and game B has a 5.56% house edge then you aren’t “far better off” with one or the other just because you win more often. In case anyone reading this cares, the difference is that your payoffs are not all the same in the field. The house edge accounts for the fact that all wins may not be the same payout. If an extra 3% chance of winning matters to you (when the expected value is identical) then you are gambling with more money than you can safely afford to lose.

What I meant by that statement is the general win-ability or frequency. Over time the house edge is the same on the bets, which is your point -- well made and well taken. I'm more referring to the notion that if I'm giving up the same spiff, I'd rather give it up less often. The only reason the edge is the same in the field is the bonuses on the 2/12 anyway.
