We had our family favorite elk smash Oklahoma burgers tonight cooked on a hot griddle with left over bacon fat. Elk is our favorite and now I gotta try your method, looks awesome. Our freezers are full from the big bull my daughter harvested on her first hunt and we are eating good this year

In Austria we love our horseradish. The best thing is when you smell a fresh portion and you feel the punch in your nose and you start to tear up because of it. An awesome spread: curd cheese, horse radish, salt and pepper. Super tasty

Welcome back guys :) If Alaska wasn't so far from NYC, I'd try to send you some moose or caribou cuts to try out. They are both insanely lean, so I personally grind them with bacon or lard, but sometimes you also need to cover up some super gamey taste since it is wild game and that helps too.

There is a restaurant in Colorado that serves nothing but wild game. I feel meats like bison, elk, venison and others like that need more love. Meat of all kinds has soooooo much different flavors and tastes, that so many people are missing out.

I love to eat out so awesome and super lean elk and I'm glad the show is back it's been a long time

And now I feel the need for an elk burger in my life!

i am a wild game butcher up in canada. one of the things i love to pair with my elk is whiskey mustard. i also take whole sirloin tips and seam them out. i separate the eye, the sandwhich steak of fast fry steak and the loose flap that connects and goes around the bone. i create a pouch out of the piece from around the bone and stuff with garlic, mustard and onions, tie it up and slow roast.

I use freshly hunted Axis Deer venison ( a super lean protein ) mixed with trimmings from dry aged Beef rib eye . I try going for an 80 % lean and 20 % fat patty . I like my burgers on a Brioche bun . With mustard , pickle , onion and a slice of Wisconsin Cheddar . Love the videos , guys . Keep them up .

yall might look into Heston Blumenthal's method of adding salt to the grind. It helps with the patty texture, as well as seasoning it from the inside

Love that these guys are back, hope this is the start of the new season and not just a 1 off but I dont know if its just because they are in a show kitchen or if its the videography or the product placements or if its just my nostalgia talking but this definitely feels more scripted/staged then i remember it being.
