In the olden days the grain mill was most often the “Heart” of a community. Here at Metcalf Mills our goal is not only the preservation and education of the grain milling process, but also to help provide a service and products that help make good, healthy, fresh milled goods more available to individuals and communities. And hopefully bring back some of that “Heart” and maybe a little more Love.

Another tip for filling in the jar. Add some onion. Usually have some around the kitchen. They are delicious when they pick up the flavor of the pepper. But milder for inexperienced pallets.

We love your videos and can't wait to see you preserving all your beautiful mountain tomatoes. We bought two great big ones at Sky Top Orchard in Hendersonville. They taste even better than they look and they look perfect. I am trying to talk Allen to take me around Metcalf Loop sometime in October. I hope we can spend more time in Hendersonville in October.

Thank you. Scares me to death when someone cut against their thumb. Gozillion times faster on a cutting board and no blood involved. Told Tipper to poke with a tooth pick and add brine, then vacuum the peppers to get the brine inside the peppers. That will fill the peppers and allow for more space. God Bless and stay safe.
