Hey there. Yes it's how it works. (I work at a McCain handled company). We also have optical sorting, metal detectors, and other devices that can remove whatever is not supposed to be there based on size, color, material, etc.

Its actually reccomended for food proccessing workers to not wear gloves since they will wash their hands more when not wearing them, reducing the risk of cross contamination. Gloves create a false sense of safety so people change them out less. I found this out when i started working in the food service. I thought it was weird at first too

gloves aren't necessary in all countries. Also gloves and most machinery do not mix. Good hand washing can be as effective as gloves. Wearing gloves sometimes means you are less aware of your need to wash often.

Frequent auditing and training takes place to ensure clean hands. Swobbings are taken of employees hands and sent off to a lab for testing.

Because they will go into 350° oil/450° oven that will kill off any of the bacteria present. But I do agree it’s a little more professional to wear them, but it’s not required really.
