The people that work at the plant and the people that work in stores downtown where the smell is every day, aren’t uncomfortable with it. I’ve even asked some of them if they’ve ever gotten to where they don’t like the smell. It’s just not as noticeable to those that live and work around it everyday as it is to those of us that live outside of town and only smell it from time to time. Think of it as a paper factory. To those that only smell it from time to time, it stinks to all high heaven but it’s not even noticeable to the ones,that work in the factory unless they are somehow reminded of the smell.

I work at a bakery here in Florida. We don't use preservatives. We have a system called sponge dough mixing. We mix the main ingredients and let it rest. We then place it into a 2nd mixer with the rest of the ingredients that make it the final flavor or style (Honey Wheat, Whole Wheat or Butter) and then start the process of cutting forming and proofing. Ours has a shelf life of almost 10 days.

@@peterifnersr.3237 There are obviously some very good bakeries in the US, but generally speaking the bread in the Supermarkets has preservatives galore. I saw one video on KZfaq, it was about three week old bread being as soft as the day it was made, that's just not right.
