He has a great, fun vibe; but you can tell he takes his work seriously. Lightly dusting fresh grated wasabi off into that bowl of noodles and then seeing it made my mouth water. His dishes look simple, but there's an elegance to them. Just amazing.

Some of the Sushi chefs I see in youtube videos intimidate me, they seem so stoic, so traditional and refined to the point of being just a tad scary- but this fellow gives off such a friendly warmth! I would not be too intimidated or scared to eat at this chef's restaurant, he seems like such a kind person and yet also very professional.

Yeah, he's actually good for the hospitality industry. Like if he were a bartender, you'd definitely be more likely to be a regular in that bar. If he ran an izakaya, where he was cooking and talking to customers, he'd have a long line of regulars.

Yoya is like one of the coolest dudes! His friendly and joking personality remind me a LOT of Miyavi. Like they could be cut from the same stone. I think they're both so cool.

I stayed a week in Kyoto and then a week in Osaka. Let me tell you that regardless of how close together they are, they are waaaay different. He's entirely not lying. Lmao. Osaka is crazy by comparison.

The Tsumoto method is a technique that is starting to become the standard in Japan, starting with KZfaq, and it greatly improves the taste of fresh fish. Immediately after the fish is brought ashore, the guts and blood, which are prone to decomposition and oxidation, must be removed as soon as possible. By completely draining the blood from the fish, the flavorful ingredients remain in the fish's muscles, which greatly improves the taste of the fish for sushi.
