Before the pandemic, Nom Wah Tea Parlor had two-hour wait times and lines out the door. But come 2020, on its 100th anniversary, the oldest dim sum restaurant in NYC's Chinatown temporarily closed and lost 80% of its business. To survive the pandemic, the team had to get creative. They pivoted to making and delivering frozen dumplings. Today, chefs make 20,000 dumplings a week that are frozen for delivery or pickup or served fresh for takeout. Business Insider visited the historic dumpling spot to see how these pivots have helped save Nom Wah.

@@josephchapa9085 profit and salary are different. Maybe he makes profits but doesn’t take salary. For example, if there are 5 partners and have $10K net profits/month. It doesn’t make sense for each of them to each take $2k salary and make $0 profit bc they’d obviously need to make at least $6-7k each. Plus they have to invest in all the additional expenses like outdoor tables and umbrella to stay in operation. Instead, they take $0 salary and make $2k in profit each. During normal times, they might have made $7K in salary each plus $3K in profits each so that makes $10k in income each month per partner.

Crazy. My friend’s dad was actually involved in the creation of a new Nom Wah location and unfortunately it was cancelled because corona. Nice to see them doing well now

You know you are a GREAT restaurant when you can adapt like that.. and I don’t mean “oh I hope your having a great day” (I do hope your day is great) I mean sincere greatness. Reaching for the next level. Grit. Hats off to you guys! And that last tid bit, “If we can’t survive, no one can.” Quite the eye opener as you remember just 6 months ago they had a 2 hour wait on the weekends...

It's businesses like this that are innovative and can adapt quickly to a new way of doing business that will survive covid in the long run. My heart goes out to business owners that can't operate during covid lockdowns and are unable, through no fault of their own, to make changes in how they do business. I admire the hard work and ingenuity and I wish the owners and staff all the best. Xx

No they aren’t the masterminds behind frozen dumplings...there are hundreds of stores small private own dumpling shops in flushing and Chinatown New York that have been doing this for the past 20 past years

NGL, 19 dollars a bag is kind of expensive for Chinatown prices. I don't think the locals really buy from them seems likely most single millennials.

I agree. There are other Chinese restaurants in NYC that are doing frozen foods to keep afloat and offering them at more reasonable prices. But Nom Wah's base is mostly hipsters and tourists that are ok with paying for something that's not worth the price. It's their choice though. Everyone's trying to wait out COVID restrictions.

Dumplings/gyoza/potstickers whatever you call is just as good if you cook it from frozen as fresh. You just have to cook it correctly

I respect this place since it's the oldest Dim Sum place in the US, but since I've been born, I've only eaten here about 5 or 6 times. Last year (ALMOST TO THE DAY), I had a great meal, but yes, it was quite expensive for the same meal I could get in New Jersey for 1/2 the cost. I just hope this place never closes, because of the history and what it stands for, for us Chinese-Americans, when most other places have already shut their doors on that same street.

Constant theme: it's tough out there. Constant observation by me: very busy and at 20,000 dumplings a week, that is around $120,000 per month retail sales. There's something wrong there.

$19 for 1.5 lbs. of frozen dumplings. At my Asian grocer in South Florida I pay $6 - 9 for a 1.5 lb. bag, depending on type. So I guess fresh frozen in NYC is not crazy. They deliver for no fee.

In the big cities and states usually, the ones on the coast have started outdoor seating and delivery has gone up a lot. People are getting comfortable with delivery and starting to like outdoor seating so it will take time for things to go back to exactly how they were.

What he really meant was no one will be wanting to eat at a Chinese restaurant for years. My uncle owned a restaurant in Montana pre pandemic for 2 years serving Chinese food. The population there is mostly white. My family has been experiencing some racist people during this pandemic. He cut his losses and moved back to CA.

Likely because of rent. (+ ingredients, bills, and staff salaries). There was a large (now closed) dim sum/restaurant called "Grand Harmony" that had it's monthly rent of $39,000 from 2008-2015. It closed in 2015 b/c they couldn't pay rent, owed like 200k, and couldn't renegotiate to renew their lease because of it. Who knows how much their rent is but if its half as expensive as Grand Harmony + 8 months of being down 80% ... they have a lot of rent to eventually pay back.

I’m sorry to make this comment but I guess i have to say it. I took my mom to this place maybe 2-3 years ago and the waitress over there not only brought the wrong order, she also insisted to overcharge us. She was very rude. That did upset my mom a lot. I used to go to this place here and there but since then, never again.

Haha these are called momos. And here near our home a resturant is such popular that it makes more than 6000 momos per day.

I am very confused. I did a very poor calculation - they said they make 20,000 dumpling which sells within a week. I looked up their prices and the cheapest option is like 4.75 per order. Looks like each order has approx 4 pieces of dumplings. That means they can have 5000 orders with 20,000 pieces in a week. or if its only 3 pieces per order than that would be approximately 6667 orders. If they are selling all of it based on what the video says. Each week the store makes $23,750 on dumplings alone per week. This does not include tips or most other dumplings that are more expensive. Take that and mulyby 4 and you have a grand total of $95,000 a month. So the business is still struggling? Even at 1/4 of the sales that would come to $23,750 a month. Is that still not enough to cover all the wages, ingredients, rents and other items? Can someone please enlighten me 🙏
