By the time keypresses on a timelapse video would help you, you won't need them anymore. At 2:42 for example you'll just know he used shift+a and chose cube, then pressed ctrl+2 in object mode to subdivide it into a ball. You'll see how he goes into edit mode and picks a face, then aligns to the side view so he can press ctrl+right click to extrude the face to where the mouse is, without it going off into weird directions. Or if you don't know that you can right click and extrude to the mouse, you'll notice it's being done in a way you aren't yet familiar with and be able to ask "How are you extruding along a path like that without having to move and rotate the new faces?" For now the best way to learn hotkeys is to hover over the tool you're interested in for a couple seconds, then look at the dialogue box. It'll tell you how to get a quick menu by the mouse, and after that it'll tell you the shortcut for that specific tool. At the bottom of your screen is a live cheatsheet that'll update with the tool you're using and really help you master them.
