I get all these weird colors with the grain is there anyway to just make it black dots instead of different colors?

What you can do in the appearance panel is duplicate the fill. On the top fill, apply the Grain effect. Inside of that effect use "Stippled" instead of "Soft Grain." Then on the Opacity of that top fill, select Overlay or Soft Light and adjust the opacity percentage to your liking. To preview the effect in full, go to Effect > Document Raster Effects Settings and change it to 300 ppi.

illustrator won’t let me click on the grain feature, it’s greyed out, why could that be? i’m trying to add grain to a text

Try turning the text into an object first (Type > Create Outlines) then try the grain filter
