Thank you for the recipes and all the in depth information. I did this grilling method at my sister’s house for thanksgiving. I made pizza as an appetizer while they were in the kitchen all day at the oven. Everyone loved it!

For me, who has made my share of good pizza, I just love watching Vito’s mastery around the dough. Every movement shows years of practice. And your subtle tips and temp management are what lifts everyone’s game. I’ll be precooking my crusts before adding the cheese from now on, among many other things. Love he sausage/rosemary combo!

Fabulous video, Vito! It was hilarious when you fell (unharmed!) into the pool! Haha! I love your videos.. you can make pizza on ANYTHING -- even a piece of hot pavement, I imagine. Pizza Boss! I've been baking pizzas on my charcoal Kamado-style grill since 2012. I bake them at 600 degrees F. I use a cast iron pizza "stone" and wood chips for smoke. I cold ferment my dough for 3 days. I make enough for 9 pizzas. I also use parchment paper to add and remove the pizza on the "stone." This helps with the assembly line. I stretch the pizza dough, put it on the parchment paper, and my wife adds the sauce and toppings. We consistently get comments like, "this is the best pizza I've ever eaten." People say, I'll just have one slice, but they come back for more and more. It's like the Lay's Potato Chip commercial, "you can't eat just one." Vito, if you can't stand the heat in Arizona, just jump into the pool. Nice one!

Great video! I have been cooking pizzas in the grill for a while. They never turn out that great. Where did you get the fresh Mozzarella and do you use simolina or just 00 flour for stretching the dough?
