Animes like Saitama and Mob psycho 100 don't really fit into this mold since they were both started as parodies. Gintama might have some of them but is also vastly different because it has such a wide main cast, so it can focus on different characters in different arcs, and it also started as something of a parody. Honestly, though, most animes, especially shonen action ones, do have a lot of these characters.

And when they do survive, they are all bloody and look like hell and look like they have absolutly no strenght left while they cough up pools of blood that is super over exaggerated. but then the guy looks up at the bad guy looking like all of this and gives a very subtle laugh because they are about to win the fight, despite the blow they just took.
