Awesome video. Looks delicious. Just got some cast iron for Christmas and looking for uses. What kind of oil did you use?

Just standard vegetable oil is fine. Even better is something like grape seed oil, which has a high smoke point and can be heated to higher temps without degrading. I’d pass on olive oil or just butter alone for the opposite reason: it starts smoking (and burning) at a lower temp. Thanks for watching and happy cooking!

When you say traditional blackening is with butter, would you just sub butter with the oil?

Yes. But the thing to watch out for if you only use butter is burning. Butter burns easier than oil (known as a smoke point). And this is particularly an issue with blackening, as it uses high heat. So I recommend using a high-heat oil like peanut or grapeseed with or in lieu of butter.
