In this video i'll show you how to take a whole top round and turn it into beautiful london broils! This is practical for the homesteader who may not know how to cut these or the person who wants to buy a whole piece from a place like cash and carry. Check out the video, you'll be happy you did! Thanks man, well you know for next time. There are several ways to cut these but one of the most important things is a good sharp knife. You'll never get good results with the wrong or dull knife. Good luck man

You're surgical with that 12" blade dude. Nice. I use a boning knife or an 8" for separating muscle. Maybe I'll try it your way. Kuddos

First time seeing your vids, I liked, and subscribed . Before Covid, we use to get the whole round all the time For the past 6+ years,(I don’t count last year, because we stopped getting them.) I remember finally learning how to trim, and properly cut them. Then BAM! We didn’t get anymore. Now it’s just bottom rounds and top rounds.

I just started a job as a butcher in a grocery store, and i only did that about 10 years ago without touching a knife. God damn is it stressful, your video might help me getting back into it, so i dont lose my job 😂😂

I know it can be. Just show willingness to learn hustle and drive and they will see the value you can offer. Keep at it if this is something you want to do. I quit because I couldn't keep doing it because it was hard to support a family of 4 on that income where I live so I became an apprentice union carpenter. Good luck my friend. Thank you. Most meat shops don't pre trim or cut nearly that much fat off but his customers seem to like it.

Thank you so much. It was trimmed more then I like personally but that's how the owner likes it. If it were up to me I'd leave the cap on and some fat.

The scrap goes into trim for ground beef and the fat is mixed in to get out desired fat percentage. Thank you for watching and I'm glad I could help.

Thank you. I use a 10 inch victorinox. I'm going to be making a strictly meat cutting, smoking, knife sharpening tutorials and other stuff related to that. I plan to open it within a week or 2. I don't have a name picked out for it yet but I will soon. Thank you.

Excellent video! Thank you. I subscribed. I have a question if you don't mind. To get the best price and quality, Is a chain store such as HEB or Kroger the best place to purchase this huge hunk of meat, or should I purchase from an actual Butcher Shop? Thank you.

It depends on brand and grade. A lot of people don't like grain fed beef like excel but honestly I don't mind. I buy what I can afford. As far as grade, I try to get choice grade beef. You can get these primals at most grocery stores other then Walmart, lol. Kroger still cuts beef but I don't they cut pork. If you want a whole piece just ask for a while top round.

I wouldn't, the owner likes no fat. I'd leave 1/4 inch or more

Thank you I appreciate you watching. Well in this circumstance my boss at this time hated fat on his top rounds. I was personally trained before working here to leave the cap on and trim little fat. Doing that you might be left with a couple pounds of trim for grind and some left over bits for stew or stirfry meterial. You want some fat for flavor which is why in a normal shop you wouldn't do it like this but it's hard to argue with the owner, lol.

They are cut resistant chain gloves. You can find them on Amazon.

I trim it much less. I usually lose like 20% after trimming top round. Feel like you lost like 30-40% of the weight trimming that much.

How many lbs or kg usually in one beef round?

I'd say on average about 15 to 20 lbs but they can vary in weight quite a bit. I've seen some about half that size.

12 inch is fine. I cut my ring finger off well half of it so a 10 inch was easier to handle for me for dexterity issues. A boning knife isn't the best to trim with other then small items as you know. You'll love the bigger knife.

Thanks that's OK. It was back in 2006. I cut it off when I was an apprentice on the bandsaw cutting a knucke bone. Watch your fingers and keep your knives sharp. I just got my carpel tunnel surgery on my left hand. If you develop it, take care of it sooner then later.

That flap and side piece can be used in so many ways to make money besides cube steaks you can make pepper steak fondue round and beef stew or grind for sirloin 90 % chop meat and make even more money
