How to Butterfly and Brine Tailor for Smoking.

2 жыл бұрынAfter a productive morning on the water I had a couple of Tailor for the smoker...but first I have to prep them, butterfly then into a simple brine. Part 2 showing the catch and cook coming soon (it was far to long for 1 video).

Thats a fantastic idea to butterfly the fish prior to smoking. I'll take that on board next time for sure!

Works a treat mate, cuts down the cooking time so the smoky flavour doesn't get overpowering. :)

Good catch, well done. I was curious how much water (looks like 2L) you put in to go with the 1 cup of salt and 1 cup of sugar? Was it brown sugar you used?

Cheers mate, 2L would be about right...I should have mentioned that in the vid. I used raw sugar, but brown sugar would be great too.

Thanks for showing the butterflying, always wondered how. Could those be cooked on a BBQ like that as i dont have a Smoker, lack of room in a caravan park. Skipping the brine part of course. Nice Tailor by the way, WOW 39cm river tailor nice

Cheers Russell, we are having some great sessions on the Tailor! Butterflied fish (or Beef, Pork, Chicken....you get the idea) works great on the barbie, brush with a bit of oil, add whatever spices you like and you are cooking with gas!

@@paddlefisher Reckon the Tailor Season will only get better with some bigger ones hopefully. Will give it a go next time i get some, be nice with Whiting to. Will let you know when i try it
