Wanda every time I see you canning I get super jealous and inspired. I used to can years ago and things did very well. I had a stroke which changed my activities greatly. I think I am ready to retry again. I have the big American Canner, plus smaller one. I never used the large one. I think I am going to practice by just canning water first, and if that is successful I may finally restart pressure canning after about 15 years.

John Hendrickson, I also have an All American canner , aren't they great ! Don't let that big canner scare you it is easy to use . Remember to put a light coating of Vaseline on the lid edge . It is wonderful not to have a gasket on the lid . Those A. American canners are built like a tank . Have fun and don't wait to can , this is a good time to can with food shortages predicted and getting worse . Blessing's ,Linda

I have a friend who canned ham, when the sore would put them on sale she would go buy several of them, and she would ask the meat department to cut them up in chunks and she canned them. she said they were really good. they went camping a lot and she would take her canned ham and make sandwiches .

I take my leftover ham and can it and I have never thought anything about it. I can it by itself and with beans. I also use ground beef (cooked) or cooked sausage. Some times I will make some corn bread and put in the bowl then pour in the beans. The recipe for canning beans is one cup to one quart. When I make beans with meat I always add less beans to allow for it to swell. That sure looks good and is making me hungry at 2:20 am. I will resist until morning and have some for breakfast.

Aren't hams that are smoked considered "cooked"? You can eat it as is if you want, if you want hot ham, that's when you cook it but you are only just warming it thru because it's already cured with the smoking process. I would not have put ANY salt into it at all as ham has a salty taste to it already.
