Pickle relish is not just for the quintessential brat or hotdog! It's definitely good as a topping, but this sweet and sour mixture can be used in an unlimited number of ways!

INGREDIENTS
- 3 cups finely chopped onion
- 1 cup finely chopped red bell pepper
- 1 cup finely chopped green bell pepper
- 8 cups finely chopped cucumbers, pith and seeds removed
- 3 cups finely chopped cabbage
- 1/2 cup canning salt
For the brine:
- 5 cups vinegar
- 1 cup water
- 1/2 cup honey
- 2 1/2 tsp celery seed
- 2 1/2 tsp mustard seeds
- 2 tsp turmeric
INSTRUCTIONS
In a large bowl, combine the onion, red pepper, green pepper, cucumbers, and cabbage. Sprinkle with salt and mix to incorporate. Pour into a large strainer and allow to drain for 6-8 hours. The drained liquid may need to be discarded during this time. After 6-8 hours, discard any liquid and rinse the vegetables well. Drain any excess rinsing liquid.
In an 8-quart stockpot, combine the drained vegetables, vinegar, water, honey, celery seed, mustard seeds, and turmeric. Stir to combine and bring to a boil over medium heat. Once boiling, cook for 10 minutes. Remove from heat and fill sterilized jars, leaving ½-inch headspace.
Wipe the rims of the jars with a clean cloth. Place on lids and rings, following the manufacturer's instructions. Place the filled jars in a boiling water bath, ensuring the water covers the jars by one inch. Boil for 10 minutes, then remove the jars from the water bath and allow to rest at room temperature for 12-24 hours. The jars should all be sealed after 1 hour.
After 12-24 hours, remove the rings to check the seals and place any unsealed jars in the refrigerator. Store at room temperature.

With the way the world is around us these "old" ways of preparing food are the wise way to prepare. We have always made canned pickles/relishes/sauces but recently this and other panty fillers have taken on new meaning if for nothing else than saving money. I can pickle relish, and put it in my potato salad, macaroni salad, and in tuna salad. So many ways to use it.

This was perfect timing! I'm getting ready to make pickle relish for the first time and after watching this video, I'm so confident that I can do it too. Definitely adding cabbage. Those satisfying pops though, so fun to watch how happy they made you.

Dude, this is basically the recipe I use. If you want exceptional relish with some spice, dice up a yellow Carolina reaper pepper and add to the mix. It has a fruity flavor that meshes so well with the relish and the pickling spices take out heat on the high end. It ends up spicy but not too spicy.

I used the honey as well and it was perfect but I added few more dry ingredients like cloves prouder, cinnamen poder and a bit of hot pepper, but I love that fact that you can use the honey instead of sugar. haven't seen that yet on youtube.

Thanks to you and your grandma for sharing this recipe! I hope to make a relish like this. I imagine your grandmother would use a spatula (instead of fingers) to remove cucumbers from the sides of a modernized food processor.

Down South we would call that chow chow. Some even use tomatoes but that's now how I like it because my Gramma never did it that way. And we all know the only "RIGHT" way to do it is the way Gramma always did it, right? LOL

Mom’s pickle relish 9 pounds pickles 2.5 pounds onions 1/2 cup salt 2 quarts water Grind above ingredients and soak overnight Then squeeze water and salt out by hand Mix 6 cups sugar 1 quart vinegar 3tsp celery seed 3tsp mustard seed 3tsp turmeric ADD above mixture to drained pickle mixture. Boil 5 minutes Pack into hot jars, water bath for 10-15 minutes Yields 9 pints

Kaleb, would this recipe be similar to Chow Chow? I think that's what they call it here in Southwest Virginia.

Looks similar to what we call Chow Chow in Georgia too, except my family always made our Chow Chow spicy with some hot peppers added.

Absolutely NOT! Carrots are banned! just kidding, dear....you can try anything you want! Add carrot bits! Add extra black pepper...cooking is all about just trial....WHAT SOUNDS GOOD? and triumph...hey, I have good food to eat! What the hell? ☺️🥰 I’m also like you...or I was..but I learned you can’t really screw up a recipe if you’re just imagining taste combinations (food, spices, herbs) and throwing in what sounds good to you. You said you remove the rings...what do you put on the jars after 24 hrs?

why do most recipes call for pickling whole cucumber: water and vinegar, but for relish just vinegar? do you have an explanation?

This is so easy and so much more fresh and better seeming than the DUDE I JUST WATCHED chop up a part of a (probably moldy) wilting bell pepper, some dill pickle SLICES and put some raw sugar into... don’t FORGET THE SPOON OF PICKLE JUICE! Oh my god....just realized that I’m being a total RELISH bitch...whaaat?. I’m sorry, everyone! Yikes! Yes, so anyhow, your recipe looks delightful, my dear. I’m subscribed!
