I’ve been canning the rotisserie chickens from Costco. They are always $5, which is a good price…great, these days. Costco seems these at a loss. Each bird makes 3.5 pints. That’s 3-4 meals for chicken pot pie, a quiche, a soup, whatever. Works great.

I use a crock pot/slow cooker to make stock. I'm looking at various solar cookers which would be my off-grid option for slow cooking. I agree about the size of jars. Meats, soups are pints or half pints. 4 ounce jars for bacon bits. :)

hello Ann !! this is a great idea, because if you catch the supermarket at the right time and if they have a lot of chickens left they reduce the price really cheap to sell out before they shut the shop so you can pick up 3-4 chickens​ for the price of 1 !! thanks for sharing and happy canning !!

Watching this now, in August of 2022, and reading this comment is wild. I regularly stand in a line at Sams to get a rotisserie chicken. They are quite the hot commodity these days. I buy 2 at a time and i'm running out of freezer space, so here I am looking for canning instructions. :)

This is really helpful, thanks! I just started canning this summer, and only tomato from my garden so far. I have wondering if home canned chicken tastes better than the store bought cans of chicken. I'm not really a fan of the store bought, but I'm wanting to keep a better pantry for hardships. Also, do you have a preference between raw packed chicken and cooked canned chicken in the way they taste? Thanks for your help!

I like raw packing meats. The texture gets so soft if the meat is precooked.

Canning any type of meat is 75 minutes for pints, and 90 minutes for quarts.

Excellent video. Question - Is there a particular reason that you remove the skin? I ask this because the skin, with all its rotisserie spices, taste so good.

I love the skin on fresh rotisserie chicken, but it turns into a rubbery, gelatinous goo when canned.

Hi Mrs Ann!I saw a video where the lady put the lids on after she boiled them, I think they were still hot? Do the lids seal better if they are hot?

I find that it just doesn't matter if the lids are hot or room temperature. They seal just fine either way. However, it's actually recommended to NOT boil them. They changed the sealing compound way back in 1969 and since then the recommendation has been that you can heat them in just hot water or on a low simmer, and a couple years ago they tested and found you don't even have to have them heated. I have a good sealing rate with them not heated.

I like the fat. What if you kept the liquid down some to make up for it creeping up as you said. Is that possible?

For a good seal you need proper headspace. However you could package and store the fat in the freezer, then use it later.

How long did you process the chicken? I went back and rewatched. You went from let it vent 10 minutes to it’s done processing, but I never heard how long? Apologies if I missed it. Thanks.

As usual, pints are 75 minutes. Quarts would be 90 minutes. Thanks for watching!

Here’s my question. If we cook the chicken in the crockpot, can we pressure cook it the same way. Rather than put all the cooked chicken in the freezer. We raise a bunch of those birds every year. We freeze them whole, then thaw them out and fillet the breasts off and slow cooker the rest. Then we put the cooked chicken back in the freezer. Usually it’s used up quickly but it’d be nice to set it on the shelf in the tasty broth

It can be pressure canned but don't shred it.

What does it mean when a jar doesn't boil after pressure canning? Does that mean it won't seal?

Sometimes. I give it up to 24 hours anyway. Sometimes they do still seal.

All your canning know how shows you got lot of canning know how...I could tell your canner been used alot....you remind me of smany old tees in nc,,who canned much, because that's what they did alot,,to preserve their homegrown produce....

We have rotisserie chickens on sale here I'm going up to get half a dozen and do this 😀 so do you eat it as in just straight chicken or do you use it just for casseroles or pies or something like that....sorry Aussie here still learning what to do with my canned food, I've become addicted to canning lol

It really depends on our mood, Jen. :) Because it's cooked and holds together pretty nicely, I have sometimes breaded and fried it. Other times we use it on sandwiches, in casseroles, or as barbecue.

I might have. 75 minutes for pints. 90 minutes for quarts. Pressure depends on your elevation.
