Many people are taking up gardening, and an excellent way to preserve the harvest is by canning. Canning is easier than you may think, and can be a fun project for the entire family.
When food is exposed to air, its also exposed to bacteria that can cause the food to spoil. Boiling food in a glass canning jar kills bacteria that may have come in contact with the food, and also creates an air tight seal to prevent new bacteria from getting into the jar, allowing food to stay fresh and edible longer. Following are instructions for canning tomatoes, one of the most popular of home-canned foods, but many other fruits, vegetables and meats can be preserved following similar steps.
To begin make sure you have all equipment necessary for canning. Make sure the jars, lids and bands are not damaged. Wash the bands, lids and jars and set in a pot that is 180 degrees until the jars are ready to be used. Be sure to not let the water boil. Remove jars and lids when they are ready to be used. Fill the canner half full with water and put on the stove to a hot simmer of 180 degrees.
As you begin to start canning there are a few simple steps to follow. For tomatoes wash, drain and place in a basket rack. Lower into a pot of boiling water for about 30-60 minutes or when the skins start to crack. Remove the tomatoes and immediately place in a pan of ice to help the cooling process. Once cool, peel away the skin and remove the cores. Depending on your preference you can keep the tomatoes whole, halved or cut into quarters. For canning tomatoes in water, take the tomatoes and place in a sauce pot covering them with water. Bring the water to a boil and boil the tomatoes for 5 minutes. Remove a jar from the pot. Add 1 tbsp for each pint jar and about a 1/2 tsp of salt as well. Pack the tomatoes into the jar leaving about 1/2 inch of space at the top. Gently use a plastic spatula and work out any air bubbles in the jar. Cover with a lid and screw on the bands. Fit the jar in the elevated rack in the canner. Lower the rack into the canner, and be sure that the jars are covered with water. Bring the water to a boil for about 40-45 minutes. Remove the canner lid, take out the jars and let them cool for 12-24 hours. Be sure to check the seal on the cans as well. If you need to reseal a can be sure to do so within 24 hours.

This has to be one of the BEST videos for me to watch. I have watched many... This is my first time canning tomatoes, yes, all canning is time consuming, but this is the fun part.. if the hardest part is boiling the jars, the rest is a piece of cake.. Now, can you use or add tomato juice to tomatoes if you don't want to pack them in water only or mix water and tomato juice together?

On a serious note, canning and having a food storage is useful for any situation where you can't just go to the grocery store such as losing your job.

I don't add water. When I stew tomatoes, there is more than enough liquid (tomato juice) from the tomatoes themselves and tastes more "tomatoey" in the end. Thanks. Good video.

Yes you can but back off on the detergent...new jars aren't that dirty. In using a boiling water bath it's important to have clean, sterile jars. A trick I use is putting my washed jars in a 220deg F. oven while I'm busy doing other canning tasks. They are there for at least 30 minutes. I remove them just before I add the contents. In my case, when I am in full canning mode, I have a lot of jars in the oven. My 2 pressure canners hold 36 jars. I use these for tomatoes; much faster & no lemons.

We dry them in the oven and then add them to jars with olive oil and basil or pesto seasoning... We have some jars well over a year old that still look good & the smell is absolutely amazing when opening the jar.

@kzqbeez You are sanitizing the lid by putting it in hot water, killing any spores or bacteria that may be on the lid, but she was telling everyone that you don't have to boil the lids. You can place them in the boiled water after you boil the containers.

@heavenonearth777 yes. boiling and canning will destroy some of the nutrients. Some, not all. The idea behind canning is to preserve your harvest for winter or whatever later use you may have. It is certainly a trade off. Fresh and raw are always better, but canned veggies are great in many uses and recipes.

Store bought has a regulated or controlled PH. The fresh ones may differ and might not be acidic enough.

before we boil the jars with the food inside, instead of just finger tightening the jar lids, could we vacuum seal the jar or is that not recommended?? and could we use a pressure cooker??

No, the nutrients are just moved into the water. As long as you don't throw the water away, you still get the nutrients.

Even if you go to the trouble of measuring the pH of your tomatoes, it's still best to add citric acid or vinegar to each jar. Even commercial producers do this. Check any can in the store. Botulism is an equal opportunity killer!!!

I don't get it when she said "Do not boil the lid" but in the VDO she just put the lid in a hot water. Why? Please explain.

Ideally less than 72 degrees. Anywhere between 55 and 70 works best.

there is no mention of taking the rings off, washing jars, and not to store your canned goods with the ring on.

yeah for real... I can just fkn cook something fresh for the time it takes canning lol. But I guess you can cook lots and save them.. just heat it up like you're cooking.

Barb J for the traditional 2 piece lid - a ring and a seal - the USDA recommends a new seal each time unless you are storing something that doesn't need processing such as dried beans. Reusable lids are also available.Thanks for watching our video.

damn, that was time consuming....I imagine there must have normally been several people doing this in an assembly line fashion, maybe. Devote several days or a week to preserving your harvest! We have gotten lazy when it comes to food. back to work, people!! :)

Why use salt at all? When using the canned product in a recipe add salt at that time. Our diets typically have way too much sodium as it is, better control of it in the final dish is possible. The amount of salt used in this video is nuts. Salt is not used as a preservative here. It doesn't matter if you use regular table salt or sea salt. Most table salt contains iodide, a trace element essential for proper thyroid functioning (Google it). It only darkens the tomatoes a little bit over time.

@DJWintercalm it stupid to hate a country or a nation, you can't hate an imaginary thing - a social construct. u can hate american people, or american politicians/governments, or certain aspects of american culture.. its often wise to be clear about what u mean. as much as the ugly side to these aspects are common knowledge, it should also be acknowledged that certain aspects are inspiration for the world e.g. secularism, freedom of speech practices, multiculturalism etc. no need to stir hate.

Not sure with her method but i know you can dry them and put them in a jar with basil and olive oil and it will keep for years in a sealed jar and it smells absolutely amazing when you open up the jar.
