Burger Scholar George Motz is here to set the record straight: A real homegrown Hawaiian burger is NOT a beef patty topped with pineapple and ham. When locals crave a burger, they order something called the loco moco. Technically a 'burger plate,' this regional icon is a burger patty placed on a bed of rice, drenched in gravy, and topped with a fried egg. I love the local foods in Hawaii- so many variants of other cultures of foods slammed together- for example: The Spam Musabi, which is sold in every 7-11 stores on the islands. And The Maunapau (slightly sweet Steam char sui Pork Buns). Spam’s not even Hawaiian 🌺 made- however, the locals have fine tuned using it 😛👍 Re-edit: “manapua”

I hate fried eggs; but when I eat loco moco, it is a must. I make mine with a mixture of burger and sausage. It gives it really good flavor from the fat and seasoning of the pork. And Aloha Shoyou is a must for that gravy

A wonderful accident that I made once. I made loco moco with left over smoked burgers from the night before/ I reheated the burger in the gravy and the gravy absorbed the smoke flavor. It was amazing.

That sounds PERFECT for someone like me from Puerto Rican heritage. You got your mixture of many styles from the tropics or from America. Rice, burger, gravy (or other toppings of preference) and on top with an egg. THAT SOUNDS PERFECT FOR CHILL PEOPLE.

I love that Hawaii's loco moco is getting some attention. I'm all for sharing part of our cuisine but please don't bastardize this local favorite by adding avocados, bean sprouts, nuts--i'm looking at you, people on the mainland who messed up the poke bowl!--etc. to make it trendy.

This was a staple in college, I lived with 4 polys and we had 4 rice cookers going at all times. This was something we ate everyday, however we did put teriyaki sauces on the burger 🍔

You can sense the Pacific Island vibes here- when I was volunteering in the Fijian rainforest for a month, a) they had lots of rice, obvs, but b) they would have lots of fried eggs, but with chopped onion fried into the egg, like you did with the burger! V cool stuff

This is basically an Aussie burger. Get a good seeded bun, toast it, add butter, the patty, onions, cheese, egg, and bbq sauce. Some places will try add a pineapple, but we don't go to those places. Love all you do George!

Hmm, now that he mentioned it, I used to eat the specialty burger for Jollibee (it was called Champ). It's basically a burger with a pineapple slice on it. It was sweet, and can barely taste the meat. The beefy taste gets even more lost because their burger sauce was really sweet, too!

I've never heard of loco moco, but my gma, then dad used to make me this. And now I make it all the time, and we're from the midwest. We didn't have a name for it really, I just used to ask for the gravy burger thing and that's what they'd make.
