I admit, rice was not our favorite food, those who have been to a canteen can probably understand. You can't really avoid rice in the weekly menu, and if it's not cooked well it may not stimulate the taste buds at all! This recipe will change your impression about rice! So I urge you to prepare this Risotto and I say enjoy your meal!

Ingredients:
200 g Arborio rice
1 small onion
2 cloves of garlic
30 g dried porcini mushrooms (hydrated in water for 20 minutes)
40 g grated parmesan
40 g butter
20 ml olive oil
60 ml white wine
850 ml vegetable soup
1/2 teaspoon dried thyme
salt and pepper to taste
For garnishing on top:
a few strips of parmesan
2-3 slices of mushrooms
fresh parsley
