The only reason we do that here is because the hog is so big it would take forever to baste the hog with a brush. That’s why we do it with a mop.

All the kids and people who don’t even cook talking about “too much salt” have no idea the portions he’s cooking and how the sodium reverse osmosis into the meat and the excess salt drips away. That’s the proper way to season HOG. Humans have been salting pork since we have been farming them.

I road up on this place this Easter weekend, there was a block party going on with some jams...kinda had to park down the road a bit ....we tried the fried pork skins, the pulled pork , ribs , baked beans , coleslaw, potato salad...every thing was amazing...the dipping sauce was his peppery mop sauce , got a bite to it ...well worth the 3 hour drive ....true bbq ...love this place ..!!

Made my way from Minnesota to Scotts at the beginning of the month here. Went to 5 different bbq joints and 3 that do whole hog and by far Scotts was the best!! Good enough I bought a gallon of sauce to bring home. If you live semi close enough make the trip I suggest you go!

I grew up cooking hogs like this in S. Carolina as well. It’s hard work, but rewarding and delicious! About the salt, it looks like a lot to someone who doesn’t know jack shyt about whole hog cookin’. My grandfather cooked hog like this, passed away @ 95, now these so called “health” nuts kick the bucket much much earlier.

Ate at his restaurant in Charleston a few days ago and it tastes just as good as it looks. Had the whole hog BBQ, ribs, and smoked chicken and all were phenomenal.

I remember my dad taking us there in early 70’s when it was only a garage smoke pit, and I taught my children that’s how it is supposed to be done and they’re teaching my grandchildren that very same rule ❤❤❤❤ long live the PIT-MASTER and low and slow, but I do wish that place would come to Minnesota and North Dakota 😅😅😅
