Recipe oxtail
1kg oxtail
4 Clove garlic
2 medium onion
1 piece ginger
1 tbsp garlic granules
1/2 of each green and ripe scotch bonnet pepper
2tbsp oxtail seasoning
1 tbsp all purpose
1 Tsp Adobo season
1 Tsp chilli powder
1 Tsp paprika
4 pimento seeds
3 sprigs thyme
Green season blend
1 green and yellow bell pepper
3 spring onion
Mix and marinate for at least 2 hours. Best to do it over night for more flavour.
To a hot pot add 2 tbsp of oil then the 2 tbsp brown sugar and let it caramelised to a dark brown colour not black as this will make it bitter then add ur season oxtail
Fry off the meat alone and leave the green season and vegetables in the container . Let the meat get some colour
Before adding ur beef or chicken stock
Add 1 pack beef or chicken stock to the container with the green season and vegetables which u had the meat in to marinate then put with just enough water to cover the meat cover and let cook and a medium to high heat. Keep more hot water in the kettle nearby just in case you need to add more water to the meat pot as this does take some time to cook and will need more water. It also depends on how thick ur oxtail is cut buy the butcher. Try to get the meat cut about 3/4 of an inch.
About 10 minutes before the pot is ready add the broad beans to meat or some carrots about the 15 to 20 minute mark.
