Sauteed Button Mushrooms
1 pound button mushrooms, sliced
3 Tablespoons olive oil
1 teaspoon salt
2 cloves garlic, minced
¼ teaspoon cracked black pepper
1 Tablespoon tarragon, minced
½ cup white wine
Heat large pan over medium-high heat, add olive oil and then mushrooms. Saute until tender and brown, stirring occasionally. Add salt and garlic, sauté for a few more minutes. Add pepper, tarragon and white wine. Cook until wine is evaporated and scrape brown bits from the bottom of the pan into the sauce. Serve warm.

Awesome. I skipped the garlic (I wear it heavy) and white wine (didn’t have an open bottle), but they were so tasty. I put half in a three egg and cheese omelet, and ate the rest plain. Thanks again!

It adds flavor and deglazes the pan to get the fond (i.e. brown bits) off the bottom. If you don't want to use wine, you could substitute stock. Thanks for watching!

Thanks chef, I was trying to make them and this was my first time cooking mushrooms and my mother kept getting frustrated with me being on my phone while cooking but you helped put I guess. But my question is that what should we do to the rest of the mushrooms the plastic rap that came in went straight to trash so I can’t repack them

Just wrap them in a paper towel and put them in the crisper drawer of your fridge.

When I cook button mushrooms turn to black color, I clean and cook the same your steps. Do you have any idea? Thank you for sharing!

That's a temperature issue. Browning only happens with sufficient heat. Mushrooms have a ton of water in them. When you cook them in a pan, the water will seep out. If you keep the heat low, the mushrooms will just simmer in their liquid and turn dark. Medium high or high heat will get rid of all that liquid, and will give the mushrooms a nice brown color.

You can’t stop the oil from disappearing, the mushrooms absorb it. But the trick is that as the mushrooms cook, they will release that oil, as the water evaporates in the mushroom the oil gets extracted. If the mushrooms are not overcrowded in the pan, they will not stick.

Sure, keep in mind the red wine may discolor the mushrooms a bit, but they will certainly still taste delicious!

+rabi shrestha That's a complicated question. Cooking, freezing, frying, drying, canning etc. all alter the nutritional constructs of food. In the specific example of mushrooms, the liquid from the mushroom evaporates in the air. When we steam a vegetable the lid holds the nutrients in the pan and that minimizes some of the evaporation however much of the nutrients end up in the water so unless you drink the steaming liquid you would also lose nutrients. Sautéing or browning has some carcinogenic effect in food to consider as well. All in all, we would say that although the nutritional benefits are altered, we don't think cooking mushrooms provides an unhealthy result.

I cook some white mushrooms today and boil them in my spaghetti sauce and for some reason they just didn’t cook down or get soft enough like Portabella... it was strange

For those concerned with the proper oils to cook with for optimal health value... my research has indicated that olive oil, while it may impart a desired flavor, is not really a healthful oil to cook with... it is healthy if it is not heated (like in a Caprese salad) or only slightly heated, not at high temp. for a while I was using avacado oil, then grapeseed & those are better at high heat, but my research shows that ricebran oil is the best for high heat if you want the healthiest outcome

The white wine totally threw me off....I've never cooked with white wine before and I wouldn't know hot to choose a wine that's worth buying. I've noticed when I go to supermarkets, etc., that there are so many types of white wines and hundreds of brands. Not to mention the hugely wide gap in prices. It would have been nice if you gave us just a bit more info on the wine. I think it's a delicious recipe and I definitely want to try it, but the white wine is holding me up.

Lucia Perez We always recommend cooking with wine that you like to drink. That doesn't mean expensive, but it also doesn't mean "cooking wine". So, choose something you like. Sauvignon Blanc or Pinot Grigio are nice balanced wines that would go great in this recipe. But if you like Chardonnay, use Chardonnay! The only wines we wouldn't recommend would be a sweet Riesling or dessert wine. Hope this helps!
