I appreciate the videos man! I like the approach of “start around this temp..cooked at this temp for a bit” instead of most overthinking in of “precisely 225 for 4.365 hours, wrap with 1:2 ratio water to bbq sauce, back on etc” - thanks, drunk Jordan

What kinda temps would you run on a pellet smoker due to less airflow? I have them started at 180 and was gunna bump to 225 to finish

Im loving these videos and the vibe, keep them coming! Question you temp at 190 and said they will carry over to about 200....how will that happen? Just by wrapping them on foil?

Pretty much. The momentum of finishing them at such a high heat carries on even after pulling them off and the foil helps trap that heat in too

You don’t wrap them until they’re done? How long do you leave them wrapped? Do you put them back on the heat? You didn’t mention any of that in the video. I definitely haven’t seen that technique before, but it would be worth trying. I’m watching through all of your videos now, so I may have a lot of questions. Sorry. I have watched videos from just about everybody else that anyone has heard of with a BBQ channel. I am very curious about your “DGAF what everyone else is doing” approach at BBQ. In my experience, I also have found some of the most widely touted techniques don’t work. Sometimes I swear they are just trying to troll people into making shitty barbecue to prop themselves up.

Yep exactly! Cooked them till they are done on the smoker then wrap them with the sauce and let them rest!
