The advantage of using beer-batter is not just the flavour, the frothing agent in the beer creates a lot of tiny bubbles. These bubbles act as insulation trapping the heat from the oil. The battered protein cooks faster allowing for a cleaner cook, and by spending less time in the oil it's not as greasy.

Just made these! Awesome, amazing! I did one additional step from one of your other recipes. I after dipping the shrimp in batter, I rolled them in panko. Perfection. Grass fed rib eye steaks were no competition to the shrimp! Thank you so much for sharing! I love your videos!

Just made this recipe. I used half masa and half cornstarch. Masa is corn flour. They were delicious. Next time I will make sure I have a less than premium beer to add.

Coating the prawn / chicken in corn flour before the batter mix to make it stick - great tip. I've used an egg to make it stick - maybe just the white of the egg ?
