That's how you do it....my first few times the ribcage was a pain in the ass...lol...only thing I hate is that they always dull my knife...but they sure are great! Love how firm the meat is...great video and enjoy!!!

FL FISHING CHANNEL my wife is the same way, except when it comes to bringing home fish lol. The marina where I launch my boat has a decent cleaning table so, I always just clean them right there before heading home. She never gives me a hard time about being on the water or spending money on gear or tackle. I have friends who are into racing and it’s a far more expensive hobby. They’re always having to replace parts that they break. All I do is burn fuel and have to buy some tackle or sometimes bait.

Beautiful job of processing that fish. I've not seen anyone work the head like you did, maybe that is special to permit? You and the cleaning lady sure are eating good! Why wouldn't you remove all the belly bones instead of only a couple?

I only remove the 2 very thick bones the other are not so big, i only remove those 2 because u will loose meat if you remove them all, also is like eating pork ribs they not the same without the bone, thanks Jim 💪

Great vid ricky! I believe you're the first person I've seen fillet a permit on youtube (2yrs)...really cool..what spices do you use on them? Ive tried different everglades seasoning, and it pretty bland. I use old bay alot.
