This is the third video in the #pantrydemicrecipes series, this one is another nifty little kitchen hack for you, on how to freeze fresh vegetables. Now it's not just as simple as throwing them in the freezer. The reason you cannot just freeze tham as is, is because it can actually dry the vegetables out and they get freezer burn. that not only effects the texture, but the flavour as well. In order to freeze fresh vegetables correctly, you need to blanche them first. this is a very simple method of just plunging the vegetables into rapidly boiling water for a few minutes.
this process is essential before freezing your vegetables. it locks in the moisture, vitamins and stops them getting freezer burn. Also, freezing fresh vegetables is a great way to save money as doing it yourself works out cheaper in most cases, because store bought frozen veg is generally more expensive, because there's more processing involved. By doing it yourself, you're essentially cutting out the middle man.
It does take a small amount of time doing the prep, but as we are all stuck indoors right now it's as good a time as any to make a big batch for your freezer. Make sure to check out the other videos in the play list. Also, stay home, stay safe and look out for each other.

Great demonstration, Adam! It is important to note that if you are doing different veg, to blanche any cruciferous (broccoli, cauliflower, Brussels sprouts, cabbage family) veg last as they will impart a bit of their sulfurous odor to anything else.

This is really going to help me. I love making recipes with veg but the frozen ones often have extra veg that i dont eat and i makes it difficult for me to use it. Now i can buy the veg i want and then prepare it for the next meals and plan ahead and not waste time while making them at night. Absolute game changer thank you so much for this video :)

I usually lay them out individually on baking paper, pop them in the freezer. Next day bag them and toss in freezer. If you skip this step they will stick together while freezing.

Adam Garratt all is well with us mostly staying home but with school being closed it’s been rough on the children keeping them busy etc. Feels like they threw the baby out with the bath water as American kids get far to much time off school as it is in my opinion and are forced to stay in school too long as not every student wants to be there and would rather be in a trade school for the last couple of years so when they graduate they are already trained in a useful job like plumbing, carpentry hair styling or even nursing skills. Just my opinion as to why teens get in to trouble and flag at so many things. Hate to think what’s down the road for us with this lot here.🥴

I would 100% freeze them flat in the bag first THEN GO BACK after a few hours and break them up. Nothing like a whole frozen bag of carrots that are frozen in a ball that you can't seperate, if you only want a handful.

Yeah idk i threw baby carrots in the freezer and froze them They never dried out however what did happen is when they unthawed they were soft and soaked so i'm guessing its because i left them in the bag when they unthawed.. but it is interesting to see a soaked soft carrot lol

Hello from Portugal. This video came at the right time, since I just came from the supermarket with a lot a vegetables 😊 Just 2 questions: for leeks and spinach is the process the same? And what about tomatoes and mushrooms, are they ok to freeze?

Tomatoes and mushrooms can be frozen from raw, no need to blanch. For leeks and spinach it's all about timings. Spinach I would cook down with a little butter until all the moisture has come out and wilted, cool and freeze. Leeks I would blanch for maybe 1 minute, drain, cool and freeze. Hope that helps x

Hi just a quick ques, if i am keeping broccoli for just a week should i blanch it or just freeze it without blanching?? I usually cut broccoli on every monday and freeze it so that it can be used in that week.

Broccoli spoils a lot quicker than other veg so I'd probably blanch it and freeze. Never put broccoli in the freezer raw as I gets bad freezer burn. Hope that helps

Of course mass producers of frozen and tinned vegetables can buy a lot cheaper in bulk, freeze or tin whilst very fresh and no waste with the vegetables decaying unlike greengrocers.

Only the same amount you'd get with store bought frozen veg. Like when you get a random chunk of frozen peas. Potatoes, same principle. Par cook, cool, freeze. You can actually freeze potatoes from raw as well

Facts Chicken you are right, there are journals saying that the water used for boiling veggies have “leaked” nutrients, & boiling might actually have effects on nutrient retention. of course degredation of vitamins differ in each veggies, especially on vitamins that are sensitive to heat. But I really do suggest you use the “water” for making soup, don’t rid of it. I can give you link to my sources if you ask

You'll inevitably get some clumping, but try next time patting them dry with a tea towel before placing into bags in the freezer. This helps reduce clumping

Cabbage only ever needs very quick cooking. i'd literally only blanch cabbage leaves for 40 seconds to a minute. re cooking from frozen again only needs a minute.

Yes, pat them dry a bit with kitchen roll or clean tea towel. This helps prevent clumping

My nanna used to blanch veg then freeze it on a tray b4 baggin it up so it didn't stick together

It's a great way to preserve. I use my local market sometimes to buy veg, always cheaper and you get loads. So I end up freezing a load like this to stop it spoiling. Stay safe

@@Adam_Garratt we used to have a great big allotment, we grew everything from strawberries to potatoes, peas, carrots , plums, apples . Nothing better than picking fresh fruit and veg and eating it within mins of plucking it from the trees or the ground. I miss those days, we have a reasonable sized garden and are in the process of making it into a kitchen garden , with a greenhouse and potting shed too . Can't wait 😁

As long as they are fairly well drained before going in the freezer you shouldn't have that much of a problem.
