Tasty. Just my 2 cents: I've found catfish nuggets with the skin on tend to have more of a 'caught from the pond' or 'gamey' taste over the filets; some folks prefer them because they like that stronger fish flavor. Another option is you can cut the filets into 3rds or 4ths; it helps cut down the cooking time and you can fit more pieces into your fryer. Thanks for posting this BTW. Thinking about doing a fry at the end of this week.

yummo. that is beautiful! why use flour at all? many southerners prefer corn meal only. does it help to soak the fish in milk first? and why the paprika? thanx.

My family from Louisiana used milk, and mustard overnight. I usually do milk with some Cajun seasonings, helps with the fishy taste. Still a bit scared to use mustard. As for the batter, same thing. Garlic salt, black pepper, paprika. I usually use a fifty fifty or a full on flour batter, because I like it to be crisp, and flaky, not super crunchy. I like the fish flavors, and it just tends to work better for me when I use self rising flour. It all comes out good for me.

If you have to buy frozen fish thaw it out in milk first and then it won't have that frozen taste. Whole milk is best but 2% or 1% milk will work too. Just add your seasonings to the milk -- after the fish has fully thawed, (max 1 hour before frying with seasoning in the milk mix), i.e.salt, pepper, Old Bay, garlic, hot sauce, whatever floats your boat, and you'll be in business. This also works for Whitings as well or any mild frying fish that is purchased frozen. Enjoy

I take fry my fish FROZEN right from the freezer. It comes out very crispy after it is deep fried in super hot sizzling oil for about one minute each side, or until golden. I use peanut oil. This recipe here is very good. It is very quick, easy and fool proof. It can work with any and ALL seafood...with the exception of Octopus, which should be cooked in a pressure cooker.

it's better to use garlic powder when you have blood pressure problems and always try to reduce the amount of salt in your food, use seasonings that are as fresh as you can get them. I grow and dry some of my own seasonings.

I love fried fish, but hate to cook it. It usually curls up both with my nuggets & fillets. That causes the middle on one side to have a pool of the batter in the middle of my fish. I even tried to scrape off that silver skin. same thing. Any suggestions?????

also if you live in the south, use native wild catfish if you can get it, not chinese farmed shipped in. the really great fry restaurants in new orleans use louisiana wild. same goes for crawfish tails.
@santamanone
@santamanone 9 жыл бұрын
Ummm, A lot of farm raised catfish is raised in the south; a LOT! Most of it in fact. As for the catfish coming from overseas, it's neither farm raised nor from China. It's wild caught from the Mekong River in Vietnam (and it's among the hugest catfish being sold at an average weight of over 100 pounds per fish) It's not being sold as catfish very often though; it's being passed off as more expensive saltwater fish.

In a cast iron pan - go 1/2 the pan on oil. Don't crowd your fish/chicken that way it won't rise above the top of the pan, and it cooks faster..
