Marc has packed into 15min presentation enough material to keep busy novice coffee operator for at least 6 months! And....after spending cash on nice expensive machine don't skimp on beans - low quality and/or stale beans (for starters, 6 weeks after roast date) will make you never getting any decent return of cash you spent on machine. And only try pre-ground coffee several times to compare to a cup you just brewed from fresh good beans - you will taste difference as you can tell day from night.

Good day Marc, I drink mostly espresso . By your tutorial I should choose grinding settings as 1 or 2 (out of 5 in my Melitta Solo perfect & milk) . Do you recommend checking the roast level and when buying darker beans , going for coarser grinding - 4 or 5 on my machine ? Thanks

Is there a way to prevent the Gaggia Anima Prestige from pumping out a quarter of an ounce of water from the milk spout right before the milk froth comes out when it makes a cappuccino?

Hi Rick, Thanks for the comment and question. Yes, if you increase the length of the coffee (liquid volume) it will weaken the drink unless you increase the strength setting. Marc

Great overview, Marc. I have been using a super automatic for a few years now, and switched over to a Saeco Energica about 3 years ago from a Saeco Magic. I consistently have a difficult time getting a hot enough cup of coffee. If I dispense the water into the cup to preheat it I will achieve about 177º but it will only get up to 157º when I brew a caffe lungo immediately into the preheated cup. I have not been using the Saeco/Philips brand descaler, but powdered types I premix. I just did the descaling (twice in a row) a couple days back, and this is the hottest I’ve been able to achieve in this machine. Water temp setting is on hot, and I use the ‘high’ pre brewing setting. Any suggestions to get a hotter cup out of this machine? My next step was to get the brand name liquid descaler. Note: about 4K cycles on this machine, combined. Thanks!

Hi Roger, I'm not extremely familiar with Saeco machines but some are very similar to Gaggia machines which I am very familial with. Sounds like you are doing everything right with pre-heating cups and regular descaling. Type of descaler used should not make a huge difference but I do prefer using manufacturer recommended products. With those you know you are getting the acid concentration right. 157F is on the low side for in cup temp especially if pre-heated. In most Gaggia machines I use coffee temps measured in the stream of coffee exiting the spouts runs ~185 - 193 on high temp setting. I'm assuming the machine used to make a hotter coffee? Your hot water is hotter than your coffee as it's a much shorter path with less "stuff" like the ground coffee to go through. But, I'm guessing your hot water used to be hotter than it is now. Any chance descaling might have been neglected in the past? I ask because if scaling is moderate to heavy even multiple descaling cycles may not get it all and heating performance can suffer. Marc

Hey Marc, I’m new to home brew espresso and I have done pretty good research so far. One of my major questions is: 1. Early in my research, everyone recommended a double shot brewed in 20-30 seconds to achieve 2oz/60ml. Recently I have come across the 1:2 brew ratio for a double shot. Won’t brewing the 1:2ish ratio, achieve different results like less volume? So basically does brewing by volume within a certain time just get you in the ballpark?

Hi Collin, Yes, timing just gets you in the ballpark. You're leaving this comment on video for automatic machines. With those timing is not a thing. For semi-auto machines with separate grinder it is. When using brew ratios one really needs to weight the espresso output as liquid volumes are deceiving with the crema and fact that 1ml of espresso usually does not equal 1g. I have a Jura S8 and absolutely love this espresso machine. I've been reading about the damage oily beans can do, and it has me concerned. While most of the beans I've been using (I've had my S8 for about 7 months now) have been medium to medium/dark roast (Lavazza Super Crema, Lavazza Top Class, and a medium roast Vietnamese blend) the first beans I received as a gift was from Trader Joe's, their ultra dark bay blend (2lb container) and I've also used Lavazza's Sinfonico dark blend and illy Intenso. Should I be concerned, or has my usage of dark roast beans not been enough to cause a problem?

Hi Jason, Happy to hear you are loving the Jura S8! If beans have an oily surface sheen it's best to not use in a super-auto machine. You may get away with it for a little while but oils will accumulate over time and can cause a problem down the road. Marc

Hi IA, Thanks for the comment and question. Best settings always depend on your personal taste, beans used and variables like strength setting. Personally, I'm almost always at the finest grind setting on a machine when making espresso beverages. So all the drinks you asked about except for standard coffee which I'd set in the medium grind size range. Hope. that helps! Marc

I'm sorry for all of the questions. I just started using a Delonghi Dinamica, baseline model superautomatic. I noticed if I brew a bold (four beans) coffee on grinder setting 5, it gives me the perfect morning coffee. However in the afternoon I like to brew espresso for capuccino. When I set the grinder at #3 the espresso is perfect. So this morning, I kept it as #3 and brewed a weaker strength (two beans) coffee. Is that the best way to handle brewing both types of drinks daily? Or am I better off continuing to switch between grinder settings?

Hi Heather, No need to be sorry - I love helping people out a whole latte! If switching between coffee and espresso It's easiest to compromise on grind setting and do what you have done and adjust strength to get what you want. Another option is to make an Americano for your coffee. If not familiar it's espresso with hot water added from the machine. Marc

I bought a bag of whole latte love crema wave for my jura e8, when I opened the bag I noted a lot of oily beans. I've been using it so far with no issues but I'm wondering if I should just give the rest of the bag to someone else and start with a new bag?

Marc, quick follow up question. We do a lot of long coffee's in the morning and may do an espresso or milk drink in the afternoon. On the Gaggia Anima Prestige is it OK to adjust the grinder from med grind to fine all at once ?

Hi Rick, Thanks for the question. When adjusting from coarse too fine the machine should be in the process of grinding or all beans should be ground out. If you switch between long coffee and espresso I recommend trying to find a compromise in grind setting that produces decent results for both styles. Marc

This seems to be the problem with auto machines. If you need to adjust the grind setting (particularly going from course to fine) you have to do it while the machine is grinding. This means that you won't get a brew with the new grind setting until you make a subsequent brew. What do you do? Throw the first one away? If you're constantly swapping drink types then you may have to compromise, like Marc says, with an intermediate setting.

I'll soon be a super automatic owner soon. I make mainly espresso, but at times I enjoy a longer American style coffee. If I change the grind settings for the longer coffee, do i have to change the diamond number at time? Saw another video that it takes a couple of cups to get to the new grind size, would i have to through out a few cups each time I change the ground size? I'm saving for the Cadorna milk, can't wait

Hi Elena, If bouncing around between espresso and longer coffee I recommend compromising on the grind setting. It's true it will take a grind cycle or two for a grind size change to take full affect. But instead of doing that I suggest you use the Americano for longer coffees on the Gaggia Cadorna - it's a wonderful feature of the machine usually only found on much more expensive machines. Honestly makes better long coffee than drip IMO. And, when making Americano you do not have to change grind size at all! Just leave it set fairly fine as you would for espresso. Marc

Hi JG, Thanks for the question. It is possible just requires more effort. For the long coffee base of the drink on the Classic I'd want to increase the grind size to avoid over-extraction and bitter flavor. Then pull the espresso at the proper (finer) grind size. The flow control on machine in video is key to pulling off making a long coffee and espresso from the same grind size. Marc

Hello, I was wondering if on a bean to cup machine there is any difference in the mechanism of brewing between a single or double espresso (apart from the dose of coffee and volume of water)? As I note whatever you are making it comes out of both spouts. I guess with a traditional machine you might use a single/ double portafilter but as there is no choice with a b2c machine does it make any adjustments? I am finding extraction time is much longer for a double compared to a single on my machine, which can make it more bitter depending on settings. Would it be better to just make 2 single shots as opposed to 1 double without having to adjust the grind? Similarly, is there any difference in grams of coffee used when making 60mls on a single cup setting compared to 2x 30mls on the 2 cup setting?

Hi AT, Thanks for the questions. How the machines brew varies by manufacturer. Gaggia machines do 2 separate brew cycles with 2 grindings when a double espresso is requested. Jura machines just up the dose of coffee for a double. Many Jura machines also use PEP (Pulse Extraction Process) when making an espresso beverage. PEP pulses water through the coffee for a deeper extraction. If you find your shots getting bitter than making 2 singles is a reasonable approach. That's waht Gaggia machines do. Hope that helps! Hey Marc I got the giga s8 and I called them at jura at new Jersey and they did reccomend me not to make coffee using fine setting they said it is best to leave it on medium or all the way on course

Hi a, Thanks for the question. Well, ability to clean grinder depends on the machine. Some are easier than others. Clogs can happen relatively deep in the machine requiring a lot of effort and some skill to get at and clear.

Hi sir. just got delonghi fully auto machine. You said before adding coffee beans i can adjust the grinder to fine setting but in the manual says only adjust the grinder during grinding process. Hi HA, Yes it is okay so long as there's very little or no visible surface oils. Minor spots of oil here and there are okay as well. Bonus: darker roasted beans are usually easier to grind than lighter roasted beans. Marc

I've always loved the thought of having a Jura, but at crunch time I'm wondering if I need to go to that price level or will the Gaggia be just as good. FYI, I've been a Nespresso user for the last 8 years and have spent over $3800! I'm excited to switch to whole-bean with a great super auto machine. Do you have any insight you can offer?

I'd like to see a taste test just based on espresso alone comparing a high end super automatic to a low- medium end semi-automatic setup, such as an HX machine and a decent grinder. I know that the semi automatic will be better once you know how to use it (and offers more flexibility and adaptability/tinkering/control). So, the question for me is, "How decent can a shot from a super automatic be?" Perhaps you've already done something like this or can point me to it elsewhere. Thanks.

Scot Wilson this appliances will never be as good as a semiautomatic, hx and up hell i would even be bold enough to say this appliances wont beat a well dialed in gaggia classic with a good grinder. This has been my experience. Now with that being sai are they better than a nespresso appliance? Yes, are they better than a keurig hellllll yea! Lol, i guess my point is, if u want to be lazy but get the beat quality cup of coffee u can then get one of this appliances. But if u want the very best and its more of a hobby get a nice semiautomatic.

I have a fully automatic but the problem I have is the milk not getting hot enough. I’m thinking this is machine specific (delonghi) but when I’ve paid £600 it’s hard to ditch it for another.

Hi LK, Most automatic machines will produce a froth in range of 130F/54C - 150/65C. Manufacturers go for that range as it's where milk tastes best due to heating. Go too hot with milk and proteins start to break down/damage flavor. One way to know you're in bad cafe is being served a super hot milk drink. I understand some people like their drinks extra hot. I run into that all the time here in the US with those newer to milk based espresso beverages expecting serving temps as hot as the straight drip/filter coffee they've been drinking for years. A couple things to help with temperature. Preheat your cups. I don't know which machine you have, but some to have passive or actively heated cup warming surfaces - use that just like they would in a cafe. Be sure you keep the frothing components clean. Milk residue can reduce milk heating. Hope this helps! Marc

Hi Dan, Thanks for the question. Just about anywhere! An oily surface sheen is common in coffee roasted very dark and almost never seen in medium roasts. In general I recommend avoiding coffee that's roasted extra dark. In those you taste the roast and not the flavor of the bean.
