A brined bird yields the most juice after roasting. Perhaps he brined this one overnight prior to this preparation. Also, fresh or dried sage leaves under the skin all over adds a tremendous depth of flavor to both the crispy skin and to the meat. 😉😎

Gordon proving here once again that he has no flipping idea what he’s doing. Egg wash? It’s not a flipping pie case. Szechuan pepper? A ridiculously overpowering flavour for a roast chicken, and applied in tooth-crackingly large chunks.

​@@LotusPrayer2the best way to salt anything is to use %1 of salt for the total weight of food. If the protein is fatty you can increase up to 5% but you have to be careful when you go towards 3-5%
