Learn how to prune and harvest a lemon balm bush with me, and then we'll learn to tie lemon balm bundles for drying! I will explain the drying process as well as explain how to use both dried and fresh lemon balm in savory recipes, salads, teas, and tinctures. I talk about the medicinal uses and benefits of lemon balm which is a nervine herb that can treat anxiety, depression, and insomnia.
Here is my simple recipe for a delicious and calming tea made with fresh lemon balm, ginger root, and honey:
ginger + lemon balm tea recipe
This mild herbal tea tastes citrusy and floral with a bit of zing from the ginger.
3 quarts of water
3 Tbsp fresh ginger root, peeled and thinly sliced
1 1/2 cups fresh lemon balm, roughly chopped
several Tbsp honey, to taste
Add the water and sliced ginger to a large pot, cover with a tightly fitting lid, and bring to a boil. Once boiling, reduce the heat to low and let simmer for 10 minutes. Next, remove from the heat and add the chopped lemon balm to the pot. Replace the lid and let steep for 10 minutes. Simply strain the solids from the liquid, add your desired amount of honey, and the tea is ready to enjoy.

I just gave my lemon balm a “haircut” last weekend and I swear, it’s already doubled in size. I use it mostly for tea (dried). I have lots of ginger on hand so I will try your iced tea version. Great for anxiety and to turn off my brain so I can sleep which can be difficult as a night shift worker. I hear it’s great on fish as well but I’m not much of a fish eater, lol. Loved your ideas.

If you don't have a rubberband, or if you just want to save time I find that a running bowline or a running surgeons knot works just fine. Its basically a loose slip knot that will tighten under the weight of the herbs enough to hold them even if they shrink in size. and its completely reuseable so you can have a permanent setup if you want or just stash the string for later. Personally, I use butchers twine. If you don't know what those knots mean I will explain it as simply as I can. Tie a loop in the end of some string. Surgeons knot is probably the easiest. Just take the end of the string, make a bite by bending like 6 inches of the string back over itself. Take the loop and tie a normal overhand knot in it. You now have a fixed loop at the end which the herbs would slip out of if they got too small. Take the main line of the string and pull it through that fixed loop and you now have a running loop that resizes really easily. Put your herbs through that and pull it down semi tight. Its not going to stay tight if your herbs are laying on the table but if you let go as if you are hanging it the weight of the herbs will keep the loop the size of the bundle and hold everything up well. Alternatively, you can just tie a line horizontally like a clothsline. Take your bundle of herbs and put the stems up to the line. Tilt the end of the stems behind the line, then take the end of the stems and put it under the standing line from the back. This will hold the herbs at a slight angle but again no knots or rubberbands really needed.

I'm growing two plants of lemon balm that I also purchased from a store, but because it has been in the mid to upper 90s with heat indices from 110 - 115°, I really didn't want to plant an actual garden, so I planted mine in 2 very large planters, and they have exploded!! But I am definitely going to harvest them and dry them for tea. I'm so excited and I have hit all the "positive buttons for you! Thanks again and I look forward to learning more.

My lemon balm is a couple of years old. I am in Michigan, but I was even able to harvest it in January. My leaves never get as big as yours, but I have never let it get as tall as yours are. I also dehydrate in my air fryer.

Thanks for the info! I have had many encounters with the benefits of lemon balm. The first time that I saw its miraculous results was about 15 years ago when my daughter was feeling really sick after eating ham that wasn't totally fresh and she was on her way to the hospital. I went to meet her and on my way I purchased a small bottle of water and a Melissa tea pouch at a cafe. I placed the pouch inside the water and brought it to my daughter... about fifteen minutes later when I arrived my daughter was pale and yellowish feeling the digestive discomfort typical of food poisoning, she started drinking the cold tea from the bottle and once she was finished she was feeling 100% better. Before my intervention she was headed for the hospital where she would have been left to wait until a doctor would attend to her and probably bombard her with all kinds of medication. I have used and abused of lemon balm since then as it grows in my property. Last night after having eaten way too many Star cookies which immediately made my stomach feel bloated, I went to bed feeling quite uncomfortable and soon after I had to get up feeling quite miserable which led me to the bathroom with chills. I picked some fresh Melissa threw it into a large cup of boiled water and started drinking it after letting it steep for 5 minutes. After half a cup of tea my total discomfort started to fade and several sips later I was back to my normal self! This is absolutely true, I recommend this plant to everyone. I usually chop up a few bits of the plant which I add to my salads! It's a godsend!

Thanks for the info. I wish I had watched this video before I tried 'drying' my lemon balm leaves in a 'slow/warm' oven. My leaves immediately turned black, much like trying to dry basil in the oven. Oh well...lesson learned! I have more growing so I will cut some more in a few weeks and try your method.

I had no idea that Lemon Balm got that big. I cut some of my Lemon Balm this morning and it's hanging in lunch size bags now. I was told to make small bunches so it would get some air flow between the cuttings and not get mold on the inside ones. I make my tea with sweet mint.

First year planting lemon balm and the only regret I have is that I haven’t done it sooner! The leaves are delicious eaten raw and tea is wonderful! I do have a question .. should one rinse the plant before hanging to dry to get dirt, bugs etc off?

I do needed this video. Thanks so much for showing how to cut it, dry it, ideas for using it, and especially how it looks once it's been "pruned". I planted mine either last year or the year before and now it's huge and beginning to flower! Unfortunately, it's in the middle of my vegetable garden so this video is helping me a lot! My lemon balm is in a container so it only gets to be about 18" inches tall between harvests, I used some in compound butter I made for our corn on the cob tonight. I recently heard that 'Lemon Balm' can have an effect on the thyroid gland, so those with thyroid issues may want to research about it just to be safe before using it.

I was fired up so I looked through a catalog and ordered 2 balms, one called lovage and one lemon bee balm. first I will see if I kill them and if I can grow them. the lovage sounded more like a cooking spice and the lemon bee balm did mention a lemon tea. Do you know if both would be a good tea or not really on the lovage. I was already leaning towards growing herbs but you encouraged me so I hope I can live up to them. I am well known for forgetting to water on a set schedule and forgetting to harvest so balm sounds easier for me to grow. I hope. I plan to make tea, to cook with, and scent up the house especially during the winter when all is closed up. Also have a dehydrator on its way. should be any day now. so excited. lol.

Melissa Officinalis is the botanical name for lemon balm. That is what you are looking for. There are many other herbs that have a lemon flavor, but they are not the same. One example would be lemongrass. Hope that helps.

Do you not have issues with mold developing? I've had that problem so often with the many things I've tried to dry. Although I live in a humid climate but keep my house super cool.

I have not had that issue! I wonder if the bundles that molded were too tightly bound or too large and just didn’t get enough airflow? I hope you have luck with it in the future!
